- 1 tsp canola oil
- 3 cups shredded iceberg lettuce
- 1 cup shredded purple cabbage
- 4 tbsp scallions, chopped

- 1 3- pound boneless pork top loin roast (double loin, tied)
- 1 tablespoon cooking oil
- Salt and ground black pepper

- 1 1/2 pounds cod fillets, skin and bones removed, cut diagonally into 4-inch long, 1-inch-wide strips

- 1/2 teaspoon salt, for sprinkling after frying, optional

Lazy Chiles Rellenos

- 2 cups whole milk
- 5 whole large eggs
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper
- 12 whole roasted, peeled and seeded green chiles (can use canned whole green chiles)or fresh roasted poblano and anaheim or roasted Hatch chili peppers
- 1 1/2 cups grated Monterey Jack
- Sliced Avacado
- Warm corn tortillas, for serving
- Top with sliced tomatoes (optional)
Carla Hall's Vanilla Pastry Cream

Heat the milk and cream in a sauce pot over medium-low, until steaming
- 1 cup Whole Milk
- 1 cup Heavy Cream
- 1/2 cup Sugar
- 1/4 cup Corn Starch
- 1/2 teaspoon Salt
- 4 Egg Yolks (room temperature)
- 2 tablespoons Unsalted Butter (cubed)
