Potato Salad

1. Cut potatoes in to bite size pieces
- 2 lbs. White Potatoes
- 6 hard boiled eggs
- 2 diced peppers (red and green)
- 1 sweet diced onion
- 1 c Homemade zucchini Relish
- 1 tbs mustard
- 2 tbs garlic powder
- 1 - 2 cups of mayonnaise or ranch dressing or combine the two
Mexican Chicken

Preheat oven to 375 degrees Heat a greased skillet to medium
- 4 skinless, boneless chicken breasts
- 1 cup salsa
- 1 cup shredded Cheddar cheese
- 1/4 cup flour
- 1 TBS ground garlic
- 1 pinch salt
- 1 pinch ground black pepper
- 1 pinch ground cumin
Ice-cream Cookie Cups

1 To make the cookie cups, beat together the shortening, butter, and sugar in a large bowl

- 1/4 cup butter, softened
- 2/3 cup sugar
- 1 egg
- 1/2 teaspoon vanilla extract

- 1 1/2 cups flour

Fruity Pork Chops

Uses apricot jam...or any oter favorite jam will work just fine
- 1 tablespoon olive oil, plus more for baking sheet
- 2 slices multigrain sandwich bread
- 4 bone-in pork loin chops

- 3 1/2 lb of beef shoulder or boneless chuck roast
- (look for a piece that is well marbled with some fat)
- 2 Tbsp olive oil
- Salt, pepper, italian seasoning to taste
- 2 large yellow onions, thickly sliced, lengthwise
- (root to tip), about 4 cups sliced onion
- 4 cloves of garlic
- 1/2 cup of red wine
- 1 bay leaf
- Several carrots, peeled and cut lengthwise
Cheddar Apple Pie Dip

Directions 1. Preheat the oven to 375°F
- Ingredients
- 1/4 c
- brown sugar, firmly packed
- 1/4 tsp
- ground cinnamon
- 1 red delicious apple, finely chopped (about 1 cup)
- 1 macintosh or fuji apple, finely chopped (about 1 cup)
- 1/2 c
- walnuts or pecans, coarsely chopped

- (8 oz) cream cheese, softened

- shredded sharp cheddar cheese

BEEF BASE GRAVY

1. Mix water, butter, seasonings of choice, beef base, bring to a simmer 2
- 2 cups water
- 3-4 TBS Butter
- 1/2 tsp seasonings
- 2 TBS. beef base
- 2 or 3 tbsp. cornstarch
- you can add onions and cook til tender before adding cornstarch and water
Maple Baked Beans

Place the beans in a large bowl and cover with cold water by 1-inch and cover with plastic wrap
- 1 pound dry red kidney beans
- 2 quarts water
- 1 large yellow onion, cut in eighths
- 1 bay leaf
- 6 whole black peppercorns
- 3/4 cup medium amber pure maple syrup
- 1/2 cup light brown sugar, lightly packed
- 1/2 cup ketchup
- 1 tablespoon Chinese chili paste
- 1 tablespoon grated fresh ginger
- 1 teaspoon kosher salt
- 5 ounces thick-cut smoked bacon, cubed

Directions Preheat the oven to 275 degrees F
- MIX IN A SMALL BOWL
- 1/4 cup Dijon mustard
- 2 teaspoons dried rosemary, crushed
- 1 teaspoon garlic salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon pepper
- One 3 to 5-pound chuck roast
- Salt and freshly ground black pepper
- 2 or 3 tablespoons olive oil
- 2 whole onions, peeled and halved
- 6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
- 1 cup red wine, optional
- 3 cups beef broth
