Ingredients

  • 2 lbs. White Potatoes
  • 6 hard boiled eggs
  • 2 diced peppers (red and green)
  • 1 sweet diced onion
  • 1 c Homemade zucchini Relish
  • 1 tbs mustard
  • 2 tbs garlic powder
  • 1 - 2 cups of mayonnaise or ranch dressing or combine the two

Preparation

Step 1

1. Cut potatoes in to bite size pieces. You can peel or leave the skin on.

2. Boil potatoes until tender (but not too soft)
Drain and allow to cool

3. Hard boil eggs clean and cool. I sometimes
add them right to my potatoes.

4. add all ingredients and lightly stir.

5. Refrigerate at least 4 hours so flavors can blend together
