Mango Rum Cooler

Combine all the ingredients (except garnish) in a blender; process until smooth
- 1 cup ripe mango chunks, frozen, plus more for garnish
- 2 oz dark rum
- 2 tablespoon freshly squeezed lemon juice
- 1 tablespoon simple syrup
- 1 1/2 ccup crushed ice
- mint leaves for garnish

- 1 ounce feta cheese, semi-soft goat cheese (chevre) or blue cheese, crumbled (1/4 cup)
