Guinness Irish Lamb Stew

For the lamb: The best cut of beef to buy is a boneless lamb shoulder
- 1.5 pounds* lamb shoulder, cubed
- 3 to 4 Russet potatoes, peeled and cubed
- 3 large parsnips, washed and cut into large chunks
- 1 yellow onions, chopped
- 3-4 cloves fresh garlic, peeled and smashed
- 3 stalks celery, whole
- 6-8 sprigs fresh thyme
- 3-4 sprigs fresh rosemary
- 1 small bunch fresh parsley
- 2 Tbs. tomato paste
- 2 tsp. Worcestershire sauce
- 12-14 oz. Guinness beer (or any dark stout beer)
- flour
- coarse salt & black pepper
- 4 cups beef stock
- Garnish of 4-6 Tablespoons fresh parsley

- 1 x 400g tin good tomatoes
- 3 cloves garlic, peeled and finely chopped
- 1 tsp honey
- 1 tsp cider vinegar
- 1 tsp fresh ground cumin (or preferably 1 tbsp fresh cumin seeds, toasted in a dry pan for a couple of minutes over a medium heat and ground to a fine powder – it tastes so much better)
- 1 tbsp chopped dried chipotle chilli
- 1 tsp chopped dried pasilla chilli
- 1 tsp chopped dried ancho chilli
- 1 tbsp good dried oregano
- fresh parsley or coriander to garnish
- flavourless oil for frying – groundnut oil or coconut oil are my preference as you can heta both to high temperatures without changing the flavour (and coconut oil has a texture similar to butter and you don’t taste the coconut)

- 4 teaspoons curing salt

- Pickling Spice:

- 2 tablespoons whole black peppercorns
- 3 inches cinnamon sticks, total length
- 2 tablespoon dill seeds
- 1 tablespoon hot red pepper flakes
- 1 tablespoon mustard seeds, any color
- 1 tablespoon coriander seeds
- 1 tablespoon celery seeds
- 4 bay leaves
- 1 tablespoon dried thyme leaves
