Fresh Fig Ice Cream

Remove the hard stem ends from the figs, then cut each fig into 8 pieces
- 2 pounds (1 kg) fresh figs (about 20)
- 1/2 cup (125 ml) water
- 1 lemon, preferably unsprayed
- 3/4 cup (150 g) sugar
- 1 cup (250 ml) heavy cream
- 1/2 teaspoon freshly squeezed lemon juice, or more to taste
Guinness Chocolate Ice Cream

1. Put the chocolate chips in a large bowl and set a mesh strainer over the top
- 1 cup milk chocolate chips chopped
- 1 cup whole milk
- 1/2 cup granulated sugar
- Pinch of salt
- 4 egg yolks
- 1 cup heavy cream
- 3/4 cup Guinness Stout
- 1 teaspoon vanilla extract
Deviled Bones

- 5 pounds meaty beef short ribs with the bones
- Kosher salt and freshly ground black pepper
- 3 c Homemade Chicken Stock (see recipe on Roast Chicken page) or canned broth
- 1/2 c dry red wine
- 3 T unbleached all-purpose flour
- 4 T Steak Butter (recipe below) or salted butter
- 1 c panko bread crumbs

The Best Mint Chip Ice Cream

In a heavy-bottomed saucepan, bring cream and milk to a simmer
- 2 cups heavy cream
- 1 cup whole milk
- 1 large or two small bunches fresh mint leaves
- 6 egg yolks
- 1/2 cup sugar
- 1/2 teaspoon kosher salt, or to taste
- 4 ounces dark chocolate
- 2 teaspoons neutral-flavored oil, such as vegetable or canola

- 1/4 cup butter
- 3/4 cup all-purpose flour
- 1/8 teaspoon salt
- 3/4 cup milk
- 3 large eggs
- 1/2 cup brown sugar
- 1 cup huckleberries or blueberries
Baked Ricotta Dip

Add the ricotta to a large bowl and stir in the minced herbs, crushed red pepper, and lemon zest
- 2 Cups ricotta cheese
- 1 clove garlic
- 1 sprig rosemary, finely chopped
- 1 lemon, zest only
- 3 Tablespoons olive oil (plus a bit for finishing)
- 1 pinch red pepper flakes
- 1 pinch salt and pepper
- 1 baguette, sliced and toasted

- For the salsa macha:
- 2 ounces dried chiles (one or more of the following: arbol, chiltepín, pequín, serrano seco, chipotle, morita, puya, guajillo, ancho, mulato, pasilla—depending on the flavors and spiciness you want to go for)
- 1 1/2 ounces (1/3 cup) nuts (one or more of the following: almonds, peanuts, pecan pieces)
- 1 tablespoon sesame seeds
- 4 garlic cloves, peeled and halved
- 2 cups olive oil
- 1 tablespoon vinegar (cider vinegar works well here)
- 1 teaspoon salt
- A generous 1/2 teaspoon dried herbs (one or more of the following: Mexican oregano, marjoram, or thyme)
Slow Cooked Ox Cheeks in Wine

Pre-heat the oven to 150 degrees Celsius
- 3 Ox Cheeks
- 2 large Carrots, chopped
- 2 sticks Celery, chopped
- 1 Onion, chopped
- 2 cloves Garlic
- 500 ml Red Wine
- a dash Brandy
- 2 Anchovies
- 1 clove
- half tsp of cinnamon
- 2 Bay Leaves
- 1 Star Anise
- 1 tsp Thyme
- 2 tbs Tomato Puree
- 750 ml Beef Stock, you could use Chicken stock if you prefer
- 100 g Plain Flour, seasoned with a generous grinding of salt
- Salt and Black pepper
- Flat Leaf Parsley, to serve.

1. Jalapeno Poppers Remove the stems from 8 jalapenos; scrape out the seeds and stuff with muenster cheese
- How to make a foil packet:
- 1 . Lay a large sheet of heavy-duty foil or a double layer of regular foil on a flat surface. (Use nonstick foil where noted.)
- 2 . Put the ingredients in the center of the foil. Bring the short ends of the foil together and fold twice to seal; fold in the sides to seal, leaving room for steam. Grill as directed. (Each recipe serves 2 to 4.)
