Spanish Chicken and Rice

1. Heat 1 tablespoon oil in a large pot
- 2 cloves garlic , minced
- Kosher salt
- 1/2 teaspoon dried oregano
- 1 tablespoon distilled white vinegar plus 2 additional teaspoons
- Ground black pepper
- 2 bone-in, skin-on chicken leg quarters
- 2 tablespoons olive oil
- 1/2 medium onion , chopped fine
- 1 bell pepper ,chopped
- 1/4 teaspoon hot red pepper flakes
- 1/4 cup minced fresh cilantro leaves
- 1 can tomato soup
- 1 cup low-sodium chicken broth
- 1 cup water
- 2 cups rice
- 1/4 cup green olives (manzanilla), pitted and halved
- 1 tablespoon capers
- 1 Lemon, wedges
- 1 Avocado, sliced
Dark Chocolate Guinness Ice Cream

1. In a small saucepan cook 12oz Guinness over medium high heat until reduced to ½ cup, about 20 minutes
- 1 (14.9 oz) Guinness
- 1 1/2 cup whole milk
- 2 1/2 cups heavy cream, divided
- 1 cup sugar
- 1/3 cup cocoa powder
- 5 egg yolks
- 1 tsp vanilla extract
Spicy Bloody Mary

Garnish - There are a ton of variations
- 2 oz. Vodka
- 4 oz. Tomato Juice
- 1/2 oz. fresh Lemon Juice
- 1/4 t freshly grated Horseradish or Creamy prepared Horseradish 2 pinches Celery Salt
- 3 dashes Sriracha Chili (or more to taste)
- 2 dashes Worcestershire Sauce

- 6 ears fresh sweet corn, in their husks
- 3 tablespoons unsalted butter, melted
- 1/2 About 1/2 cup Mexican crema or sour cream mixed with a little milk or cream
- 1/3 cup crumbled Mexican queso anejo or queso fresco, or cheese like parmesan, feta or farmer’s cheese
- 1 About 1 tablespoon hot powdered chile

Directions In a small saucepan, heat the oil over medium
- 1 tablespoon vegetable or olive oil
- 6 garlic cloves, peeled and finely chopped
- 1/2 cup ground ancho chile powder (available from national companies, such as McCormick, Mexican groceries and internet sites)
- 3 tablespoons vinegar (apple cider vinegar is common in Mexico)
- 1 1/2 teaspoons dried oregano, preferably Mexican
- 3/4 teaspoon sugar
- 1 teaspoon salt
Garlicky Popcorn with Mexican Queso Anejo - Rick Bayless | Frontera

Scoop the mojo into a strainer set over a bowl and gently press to remove as much oil as possible
- 1/3 cup Slow-Cooked Garlic Mojo (stir before measuring)
- 2/3 cup popcorn kernels
- 1/4 cup (a generous ounce) grated Mexican queso anejo or other garnishing cheese like Parmesan or Romano

Blueberry Crumble

Place blueberries in a greased shallow 2-1/2-qt

- 2 cartons of fresh blueberries
- 1/4 cup packed brown sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon lemon juice
- 1/2 teaspoon grated lemon peel
- 1/2 teaspoon ground cinnamon
- 1 cup all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 egg, lightly beaten
- 1/2 cup butter
- Vanilla ice cream, optional
Mango Mint Ice Cream

1. Peel mangoes and dice all the meat discarding seeds
- 3 Mangos
- 1.5 cups whole milk
- 2 cups heavy cream
- .75 cup sugar
- 2 tsp fresh mint
Bacon Cinnamon Rolls

- 1 package refrigerated cinnamon rolls (the kind in the tube)
- 8 slices bacon (and if you like your bacon well done, cook it in the microwave for 1-2 minutes)
