Chicken Wings with Tomatoes

Chicken wings are browned, and then served with a homemade tomato and onion sauce
- 8 chicken wings
- 20 grape tomatoes, halved
- 1 medium onion
- 2 sprigs thyme
- 1 1/2 tablespoons paprika
- 1 cup beef stock
- 1 tablespoons olive oil
- Salt and pepper, to taste
Beef Bourguignon

Directions: Preheat oven to 375°F
- Ingredients:
- 5 slices bacon, cut into 1/2 inch pieces
- 5 pounds beef cheeks
- 2 teaspoons salt
- 1 teaspoon pepper
- 3 cloves garlic, chopped
- 2 carrots, sliced
- 2 stalks celery, sliced
- 3 onions, sliced
- 1/2 cup parsley, chopped
- 2 tablespoons fresh ginger, chopped
- 3 4” pieces lemongrass, smashed
- Zest of 1 orange
- 14 ounces diced tomatoes
- 2 tablespoons brown sugar
- 1 tablespoon tomato paste
- 2 cups red wine
- 3 cups beef stock
- 8 teaspoons Dijon mustard
- 8 teaspoons bread crumbs
- 1 cup spinach, cooked
- 1/2 cup watercress, for garnish

- 2 tablespoons milk
- 1 tablespoon diced pickled cherry peppers in jar
- 1 tablespoon diced pickled jalapenos
- 1 tablespoon pickled jalapeno juice
- 8 natural casing all-beef franks
- 8 Pretzel Hot Dog Buns, recipe follows
- 1/4 cup pickled jalapenos, chopped for garnish, optional
- 1 cup milk
- 1/4 cup light brown sugar
- 2 tablespoons honey
- 1 packet active dry yeast
- 2 tablespoons unsalted butter
- 2 small cloves garlic, grated
- 3 cups all-purpose flour, plus more for dusting
- 1 cup bread flour
- 1/2 cup baking soda
- Pretzel salt or coarse ground sea salt, for sprinkling
Handmade Salsa...Literally

Into a large bowl, add all the ingredients one by one
- 28 oz. can whole tomoatoes
- 1 16. oz. can diced tomatoes
- 1 fresh tomato, diced
- 2 10 oz. cans Rotel diced tomatoes & green chili
- 1/2 medium onion, chopped
- 1/2 jalapeno, chopped
- 2 roasted green chili's, chopped
- 3 garlic cloves, minced
- 1/2 tsp. sugar
- 1 tsp. garlic salt
- 1/4 tsp. ground cumin
- 1/4 tsp. smoked paprika
- Juice of half a lime
- 1/4 c. cilantro, chopped
Creamy Artichoke Salad Dressing

Combine all of the above ingredients in a food processor and process until smooth
- 16 oz. sour cream
- 6.5 oz. marinated artichoke hearts – plus the marinade
- 3 cloves of garlic
- 1 tablespoon of capers – plus a little marinade
- Small handful of fresh dill
- Juice of 1/2 lemon
- 3 slices of red onion
Beets with Walnuts, Goat Cheese, and Baby Greens

- 6 medium beets (red and golden), about 1 1/2 pounds
- 1 cup water
- 8 cups mixed baby salad greens
- 1 cup loosely packed fresh flat-leaf parsley leaves
- 1 tablespoon white balsamic vinegar
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons extra-virgin olive oil
- 1/2 cup (2 ounces) crumbled goat cheese
- 1/4 cup coarsely chopped walnuts, toasted

- 2 large egg yolks

Grilled Sweet Potatoes with Scallions

Heat grill to medium. Peel sweet potatoes, and cut lengthwise into 1/2-inch-thick slices
- 3 sweet potatoes
- 3 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper
- Salt and black pepper
- 2 tablespoons butter
- 2 scallions, thinly sliced
