- 2 large ripe tomatoes, cut into bite-size pieces
- 1 small cucumber, peeled and diced
- 1 small red onion, thinly sliced
- 1 clove garlic, very finely minced
- 1 cup fresh basil leaves, torn into small pieces with your hands
- 1/2 cup extra-virgin olive oil, plus more as needed
- 3 tablespoons balsamic vinegar or red wine vinegar, plus more as needed
- salt and freshly ground black pepper, to taste
- 8 slices thick stale country style Italian bread, torn into bite-size pieces (sourdough is also good but not something you use here in Italy)
Alton Brown's Ginger Ale

- 1 1/2 ounces fresh ginger
- 6 ounces sugar
- 7 1/2 cups water, filtered
- 1/8 teaspoon active dry yeast
- 2 tablespoons fresh lemon juice
Pickled Okra

- 2 pounds young, small to medium okra pods
- 4 small dried chiles, split in 1/2
- 2 teaspoons mustard seeds
- 12 sprigs fresh dill
- 4 cloves garlic, whole
- 1 teaspoon whole peppercorns
- 1/4 cup kosher salt
- 2 cups rice wine vinegar
- 2 cups bottled water
- Special Equipment: 4 pint-sized canning jars, sterilized*
Chocolate, cardamom and stewed fig gelato

In a pot, gently heat the milk and add the chocolate, the sugar and spice
- 1 quart milk (or for a richer, creamier consistency, pouring cream)
- 9 ounces dark chocolate (70% cocoa), chopped
- 4 1/2 ounces fine sugar
- 2 egg yolks
- 1 1/2 teaspoons cardamom
- 8-10 stewed figs

- 1 cup Shiner Bock beer
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 teaspoon kosher salt
- 4 egg yolks, beaten
- 2 teaspoons vanilla extract

1. Heat a large saucepan over medium heat and add the olive oil
- 1 tablespoon olive oil
- 2 strips of smoked bacon, finely chopped
- 1 clove garlic, peeled and finely chopped
- 1 medium red onion, peeled, halved and finely chopped
- 2 carrots, washed and finely chopped
- 2 sticks of celery, finely chopped
- 1 zucchini, finely chopped
- 1 small leek, washed and finely chopped
- 1/2 teaspoon dried oregano
- 1 bay leaf
- 2 14 1/2 ounce can chopped plum tomatoes
- 1 large potato, scrubbed and diced
- 1 cup Romanesco cauliflower or cauliflower florets
- 1 15 1/2 ounce can chickpeas, drained and rinsed
- 4 cup(one 1-qt. container)reduced-sodium vegetable broth, preferably organic
- Large handful curly kale, stalks removed, chopped (about 2 cups)
- 1/2 cup mixed small pasta shapes or broken spaghetti
- Small bunch of fresh basil (optional)
- Sea salt and freshly ground pepper
- 5 tablespoons freshly grated Parmesan cheese

Smoked Salmon and Egg Torta

- 4 oz smoked salmon
- 5 eggs
- 6 oz (maybe less) cream cheese softened
- 1/4 purple onion sliced thin
- 3 T capers, drained
- 3 cloves garlic minced
- 1 loaf french bread
- olive oil
