Fresh pasta with favas and ricotta quadrotti ai porri, fave e ricotta salata

FOR PASTA: On a clean work surface, mound flour and form a well in the center

- 2 cups unbleached all-purpose flour
- 2 large eggs
- 2 large egg yolks
- VEGETABLES AND SAUCE
- 2 cups shelled fresh fava beans (2 to 2 1/4 pounds in pods)
- 3 tablespoons extra-virgin olive oil plus more for drizzling
- 2 cups thinly sliced leeks (about
- 2 medium, white and pale green parts only), rinsed and patted dry
- Scant 1/2 cup finely chopped carrot
- Fine sea salt
- 1/2 pound ricotta salata cheese, grated on the small holes of a box grater
- 1 1/2 tablespoons unsalted butter
- 1/4 cup plus 2 tablespoons whole milk
- 1 tablespoon finely chopped marjoram
- Freshly ground black pepper
Goat Cheese Cheesecake

Most people use goat cheese in savory recipes, but I love the tang of it in a cheesecake
- Crust:
- One 8 oz. block organic cream cheese
- 6 oz. of Local Goat Cheese - Plain (Mama Terra)
- 1 tub (approx. 8 oz.) Mascarpone Cheese
- 1/2 cup granulated sugar
- 1/2 tsp. Freshly grated nutmeg
- 1/4 cup vanilla sugar
- 3 whole large eggs (from our local farmer)
- 1 package Osvego cookies (Italian honey malt cookies) - crushed very fine or crushed Amaretti cookies
- 1/4 cup granulated sugar
- 4 ounces melted butter (one stick)
Japanese Potato Salad

1. Fill a large pot with water and 3 tablespoons of the salt and bring to a boil over high heat
- 3 tablespoons plus 1/2 teaspoon kosher salt, divided
- 3 Idaho potatoes, chopped into 1-inch cubes and rinsed under cold water
