Chunky Apple Cake Recipe

In a large bowl, cream the butter, sugar and vanilla
- BUTTERSCOTCH SAUCE:
- 1/2 cup butter, softened
- 2 cups sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 2 cups all-purpose flour
- 1-1/2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 6 cups chopped peeled tart apples
- 1/2 cup packed brown sugar
- 1/4 cup butter, cubed
- 1/2 cup heavy whipping cream
Grilled Beef Panzanella with Port Wine Vinaigrette

If the weather isn't conducive to grilling outdoors, use a grill pan for the beef in this main dish salad
- Vinaigrette:
- 2 tablespoons port
- 1 tablespoon cider vinegar

- 2 slices bacon
- 3 1/2 pounds chicken pieces1 medium onion, coarsely chopped

1.Beat cream cheese and milk in large bowl with electric mixer at low speed until blended
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup milk
- 2 cups (8 ounces) shredded sharp Cheddar cheese
- 2 cups (8 ounces) shredded Monterey Jack cheese
- 1/4 cup (1 ounce) crumbled blue cheese
- 10 slices bacon, cooked, crumbled and divided
- 3/4 cup finely chopped pecans, divided
- 1/4 cup finely minced green onions (white parts only)
- 1 jar (2 ounces) diced pimiento, drained
- Salt and black pepper

- 1 teaspoon soy sauce
- 1/4 cup cashews, chopped
- Salt and pepper to taste
