Creamy Chicken & Broccoli Bowties

In a large pot of salted boiling water, cook bowties according to package directions until al dente
- 12 oz. bowties
- 1 head broccoli, cut into florets
- 1 tbsp. extra-virgin olive oil
- 2 boneless skinless chicken breasts
- kosher salt
- Freshly ground black pepper
- 1 c. milk
- 1/2 c. freshly grated Parmesan
- 6 oz. cream cheese, softened
- 3 cloves garlic, minced
- Crushed red pepper flakes, for garnish
Roasted Broccoli Cheese Soup

On a large cookie sheet place broccoli florets
- 2 (roughly 16 ounces) large florets of fresh broccoli
- 1/2 c (113g) butter
- 1 large onion finely diced
- 7 c (56 ounces) chicken broth
- 1/2 lb muenster cheese shredded
- 1 lb cheddar cheese shredded
- 3 tsp. garlic powder
- 2 c (480 grams, 16 ounces) half and half
- 1 c water
- 2/3 c cornstarch
- EVOO for drizzling over broccoli as it roasts
- salt and pepper to taste

- 2 boneless, skinless Chicken breasts, cut in half lengthwise, to form 4 thin cutlets

- 1/4 cup brined capers, rinsed

Sunday Pot Roast

Sunday Pot Roast Pot roast, braised with lots of red wine
- 3 tablespoons olive oil
- 1 4-pound rump roast, ; boned
- 3 medium onions, ; coarsely chopped
- 2 tablespoons Hungarian sweet paprika
- 2 bay leaves
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 4 cloves garlic, ; crushed
- 2 cup red wine ; (or if you prefer, 1 cup wine and 1 cup water)
- 2 cups beef broth
- 2 pounds new potatoes, ; scrubbed
- 8 carrots, ; cut into 1-1/2-inch-thick pieces
- Coarse salt ; to taste
- Freshly ground black pepper ; to taste

Directions 1.Bring a large pot of lightly salted water to a boil
- 1 (16 ounce) package fusilli (spiral) pasta
- 3 cups cherry tomatoes, halved
- 1/2 pound provolone cheese, cubed
- 1/2 pound salami, cubed
- 1/4 pound sliced pepperoni, cut in half
- 1 large green bell pepper, cut into 1 inch pieces
- 1 (10 ounce) can black olives, drained
- 1 (4 ounce) jar pimentos, drained
- 1 (8 ounce) bottle Italian salad dressing
Tropical Sangria

Combine all ingredients in a large pitcher and chill until ready to serve
- 1 bottle sweet white wine*
- 1 c. Malibu rum
- 6 oz. 3/4 c. or 1 small can pineapple juice
- 1/2 c. orange juice
- Fresh pineapple oranges, strawberries, and kiwi, sliced
- *I use Barefoot Moscato Spritzer OR Barefoot Crisp White Spritzer depending on desired sweetness.
