Beef Stroganoff Soup

In a large pot or dutch oven, melt butter over medium-high heat
- 2 tablespoons unsalted butter
- 1 pound beef sirloin , trimmed of fat, thinly sliced into bite-sized strips
- salt and pepper
- 8 ounces sliced crimini mushrooms
- 1 medium sweet onion , diced
- 3 cloves garlic , minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 5 cups low-sodium chicken or beef stock
- 1 1/2 cups dried egg noodles
- 1/2 cup sour cream
- 2 tablespoons all-purpose flour
- chopped fresh parsley
Parmigiano Reggiano Crusted Chicken Piccata

Place the flour on a plate
- 1/4 cup flour
- 2 eggs
- 1 1/4 cups grated parmigianoreggiano cheese
- 4 skinless, boneless chicken breast halves ; pounded 1/4 inch thick
- Salt
- 1/2 pound angel hair pasta
- 3 tablespoons extra-virgin olive oil ; (EVOO)
- Juice ; of 1 lemon
- 2 cloves garlic ; finely chopped
- 1/4 cup capers ; drained and patted dry, or 12 caper berries, sliced
- 1/2 cup dry white wine ; (eyeball it)
- 1/4 cup flat-leaf parsley leaves ; chopped
- 1/2 cup chicken broth
- 2 tablespoons butter ; chilled and cut into small pieces
- One ; 5-ounce package baby spinach
- Pepper
Balsamic Dressing

Put vinegar, mustard, garlic, salt and pepper in the bowl of a food processor
- 1/3 cup balsamic vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, chopped
- 1/2 tsp each salt and freshly ground pepper
- 2/3 cup extra virgin olive oil

- 1 package Jiffy corn muffin mix

- Chicken Alfredo Baked Ziti
- Delicious chicken and ziti are tossed with a lighter alfredo sauce and baked up to cheesy perfection.
- Prep: 10 mins Cook: 30 mins Total: 40 mins
- Chicken Baked Ziti Ingredients:
- 12 ounces ziti (or any pasta shape)
- 2 cups shredded, cooked chicken (about 2 small chicken breasts)
- 1 batch alfredo sauce (see below)
- 1 1/2 cups shredded mozzarella cheese (I used 2% low fat)
- (optional toppings: additional shredded Parmesan cheese, chopped fresh parsley)
- Alfredo Sauce Ingredients:
- 1 Tbsp. olive oil
- 4 cloves garlic, minced
- 3 Tbsp. flour
- 1 cup chicken broth
- 1 cup low-fat milk (I used 1%)
- 3/4 cup freshly-grated Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. black pepper

- 7 ounce can of black olives, whole
- 1 1/2 cups chicken broth
- 1/4 cup white wine
- 1 can tomato paste
- 1/2 cup flour
- 1 1/2 tsp salt

Instead of Prego Traditional Italian Sauce
- 1 tbs extra virgin olive oil
- 1 onion, finely chopped, about 1/2 cup
- 2 large cloves of garlic, minced
- 1 28 oz. can crushed tomatoes
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbs fresh, chopped parsley or basil.
Mandarin Pasta Spinach Salad with Teriyaki Dressing

This salad is easy, quick, healthy, and tossed in the most addictive teriyaki vinaigrette dressing!
- 8 ounces bowtie pasta noodles
- 4 cups spinach leaves
- 1/2 cup craisins
- 1/3 cup cashews or Diamond of California Pine Nuts
- 1 4-ounce can mandarin oranges, drained
- 1/4 cup cilantro leaves, roughly chopped
- 1/3 cup teriyaki sauce (the thicker, the better!)
- 1/3 cup rice wine vinegar (may sub apple cider vinegar)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder (if you have it)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon sugar
- 1/2 cup oil (such as vegetable oil, canola oil, olive oil)
