- 2 tablespoon olive oil
- 2 tablespoon unsalted butter
- 1 1/2 pounds 80/20 ground beef
- 1 1/2 pounds ground pork
- 6 ounces pancetta chopped finely
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup large onion finely chopped
- 1 cup celery stalks finely chopped
- 1 cup carrots finely chopped
- 1/2 lb. sliced mushrooms
- 5 garlic cloves grated or finely chopped
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/2 tsp crushed red peppers (optional)
- 1 pinch freshly grated nutmeg
- 1 cup white wine or red if you prefer
- 36 ounces good quality can tomato puree or
- 2 each 14.5 oz. can diced San Marzano tomatoes
- 2 cups milk
- 1 cup beef stock
Broccoli Cheddar Soup

This soup is made in a Crock-Pot
- 4 cups broccoli florets cut into small bite sized pieces
- 1/2 yellow onion diced small
- 2 cups shredded carrots
- 4 cups chicken stock (or vegetable stock)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/8 tsp nutmeg
- 3 TBSP unsalted butter
- 1/3 cup all purpose flour
- 1 cup half and half
- 2 cups shredded cheddar cheese
Chicken Liver Pate

Saute chopped onions in lot of butter for 3 minutes
- 6 Eggs ; hard-boiled
- 3 small Onions ; chopped
- Butter ; Lots of it!
- 1 pound Chicken Livers
- 1 pinch Thyme ; to taste
- 1 pinch Summer Savory ; to taste
- Salt ; to taste
- Pepper ; to taste
- 1 Bay leaf
- White wine ; a few swigs
Mary Ann's Cream Cheese Pound Cake

Sift flour - set aside. Cream together butter, margarine and cream cheese
- 3 cup Soft As Silk Flour
- 3 cup Sugar
- 6 Eggs
- 1/2 pound Cream cheese ; softened
- 1/2 pound Margarine ; softened
- 1/4 pound Butter ; softened
- 1 tablespoon Vanilla, almond or lemon extract
Pecan Crusted Chicken

- 1 cup pecans. toasted
- 1/2 cup bread crumbs
- 1 teaspoon dried basil
- 4 skinless, boneless chicken breasts (about 1 1/2 pounds total)
- 1/4 cup honey mustard

- Mash together:
- FOR DRESSING
- 1 tsp garlic, chopped
- 1/8 tsp kosher salt
- Add:
- 1/2 cup Parmesan cheese, finely grated
- 1 tbs fresh lemon juice
- 1 tbs mayo
- 1 tsp anchovy paste
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 tsp Tabasco
- Whisk In:
- 1/4 cup EVOO
- Salt and Pepper to taste
- FOR THE SALAD-
- Fry:
- 1/2 cup prosciutto, thinly sliced
- 1 tsp olive oil
- Toss Together:
- 4 1/2 cups romaine lettuce, torn into bite size pieces
- 2 cups mixed greens
- 1/2 cup Parmesan, grated

- 8 tablespoon Butter
- 2 container Chicken livers
- 2 package Chicken bouillon
- 1 small Onion ; chopped
- Salt ; to taste
- Pepper ; to taste
- Savory or poultry seasoning ; to taste
- Cayenne ; to taste

- 1 Eggplant
- 1/4 cup Olive oil
- 1 Onion ; chopped
- 2 Red bell pepper ; chopped

- 1 tablespoon Sugar
- 2 tablespoon Balsamic Vinegar
