Heat 2 T butter in a 10" cast-iron skillet over medium heat
- 1/4 lb unsalted butter, divided
- 1 1/2 cups peeled and diced russet potatoes
- 1 1/2 cups chopped leeks
- 1/2 cup chopped carrots
- 8 oz cremini mushrooms, sliced
- 2 t kosher salt
- 2 t chopped garlic
- 3/4 t black pepper
- 12 oz shredded chicken
- 1 cup frozen peas
- 2 1/2 T flour
- 1 1/2 cups chicken stock
- 1/4 cup heavy cream
- 1 T hot sauce
- 10 " square puff pastry sheet

Mindless Mu Shu Pork

Trim and cut pork chops into 1/8 inch strips
- 4 Pork chops, thin ; about 3/4 pound
- 2 teaspoon Peanut oil
- 2 small Onions ; 1 1/2 cups sliced
- 8 ounce Mushroom ; sliced
- 1/2 teaspoon Garlic ; minced
- 1/2 teaspoon Ground ginger
- 2 package Coleslaw mix ; 8 ounces each
- 1 bunch Scallions ; 1/2 cup, sliced
- 1/4 cup Dry sherry
- 2 teaspoon Dark sesame oil
- 2 tablespoon Hoisin sauce or plum sauce
- 8 small Flour tortillas ; 8"
- 2 teaspoon Cornstarch
- 1/4 cup Soy sauce

Crunchy Honey Pork Chops

Whisk the eggs and 4 Tbs
- 6-9 pork chops (not too thick, you can use boneless pork loin)
- 2 eggs
- 4 tbs water
- 2 cups flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- Canola or vegetable oil for frying chops
- Glaze
- 1 1/2 cups honey
- 1/2 cup brown sugar
- 1/2 tsp ginger
- dash cayenne pepper to your taste
- 1/2 cup soy sauce
- 1 tbs garlic chopped
- 2 tbs butter

- 1 jar (8.5 oz) sun-dried tomatoes packed in oil
- 1/4 cup walnuts, toasted

- 1/2 tsp salt

Pan Roasted Fingerling Potatoes with Pancetta

- 2 pounds fingerling potatoes ; scrubbed and cut into 1/2-inch rounds
- 1/4 cup extra-virgin olive oil
- 1/2 pound thickly sliced pancetta ; cut into 1/3-inch dice
- Salt ; and freshly ground pepper
- 1 onion, thinly sliced
- 1/4 cup finely chopped dill

- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine salt
- 3/4 cup unsalted butter (1 1/2 sticks), softened
- 2/3 cup sugar, plus more for rolling
- 1 large egg
- 1/2 vanilla bean, seeds scraped from pod, or 1/8 teaspoon vanilla bean paste or 1 teaspoon pure vanilla extract
