Honey Roasted Chicken and Sweet Potato Skillet

Preheat oven to 375 degrees
- Ingredients
- 4 chicken thighs or chicken breasts
- 5 tablespoons butter divided
- 4 tablespoons honey divided
- 1 teaspoon salt or to taste
- 1/4 teaspoon black pepper or to taste
- 1 1/2 teaspoons Italian blend seasoning divided, (may sub about 1/2 teaspoon dried oregano + 1/4 teaspoon each dried thyme, dried basil, dried parsley)
- 1/2 teaspoon garlic powder
- 1 1/2 pounds sweet potatoes peeled and diced into 1-2 inch pieces
- 2 tablespoons dried cranberries
- 1/4 cup pecan halves
- fresh thyme for garnish
Pickleback Chicken Wings

In a large bowl, combine wings and pickle juice
- 3 lb. chicken wings
- 1 c. pickle juice
- 2 tbsp. bourbon
- 2 tbsp. honey
- 1 tbsp. brown sugar
- 1/2 tsp. onion powder
- 1/2 tsp. paprika
- 1/4 tsp. cayenne pepper
- kosher salt
- Freshly ground black pepper
- 2 tbsp. chopped dill
- 1 c. Sliced pickles
- 1 c. ranch dressing
Garlicky Shrimp Dip

Preheat oven to 350º. In a large skillet over medium heat, heat olive oil
- 2 tbsp. extra-virgin olive oil
- 1 lb. shrimp, peeled and deveined
- 3 cloves garlic, minced
- kosher salt
- Freshly ground black pepper
- Juice and zest of 1 lemon
- 8 oz. cream cheese, softened
- 1/4 c. mayonnaise
- 3/4 c. shredded mozzarella
- 1/4 c. grated Parmesan
- 3 tbsp. fresh parsley, divided
- Pita chips, for serving
Dry Rub for Rib Eyes

Mix well. Spoon on meat, rub around and press into steaks
- 1 1/2 teaspoon Garlic Salt
- 1 1/2 teaspoon Basil
- 1 1/2 teaspoon Oregano
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
Classic Meatloaf

1.Preheat oven to 400 degrees
- 3 slices white sandwich bread
- 1/3 cup whole milk
- 1 1/2 pounds ground beef chuck
- 1/2 pound ground pork
- 1/2 medium onion ; grated
- 2 garlic cloves ; minced
- 1 large egg
- 1/2 cup ketchup
- Coarse ; salt and ground pepper

Combine eggs, milk, rice, sugar, raisins, vanilla and 1/2 tsp salt; mix well
- 3 slightly beaten eggs
- 2 cups milk
- 1/1 /2 cups cooked rice
- 1/2 cup sugar
- 1/2 cup raisins
- 1 tsp vanilla
- Ground cinnamon for sprinkling

Beef Stroganoff - One Pot

Season the steak with salt, pepper and 1 tablespoon flour
- INGREDIENTS
- 1 tablespoon olive oil
- ¾ lbs steak, cut into thin slices (I used flank)
- salt and freshly cracked black pepper, to taste
- 1 tablespoon + 3 tablespoons all purpose flour, divided
- 1 cup cremini or white button mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 tablespoons unsalted butter
- 3½ cups reduced sodium beef broth (plus more as needed)
- 2 tablespoons red wine vinegar
- 3 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 6 ounces dried wide egg noodles
- 4 ounces cream cheese, softened (optional but recommended for an extra creamy sauce)
- ½ cup sour cream (I used full fat)
- freshly chopped parsley, for garnish
Raspberry Dark Chocolate Banana Bread

Directions: Preheat oven to 350°F
- 2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated white sugar
- 4 tablespoons (1/2 stick) unsalted butter, at room temperature
- 2 large eggs
- 1 1/2 cups mashed ripe banana (about 3 bananas)
- 1/3 cup plain low fat yogurt
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chunks or chips
- 1 cup halved raspberries, tossed in 1 tablespoon all-purpose flour

Meat butter in a 6-quart stockpot over medium heat
- 1/4 pound ; (1 stick) unsalted butter
- 1 large Bermuda onion ; chopped (about 2 cups chopped)
- 2 or 3 red or green peppers, sliced
- 2 tablespoons chopped garlic
- 2 pounds boneless veal shoulder ; cut into 1-inch cubes
- 1 cup all-purpose flour
- 1 quart sliced mushrooms
- 1/4 cup chopped fresh parsley leaves
- 3 cups crushed plum tomatoes ; (recommended: San Marzano)
- 1 pint chicken stock or broth
- Salt
- Black ; pepper

1. Cut each chicken breast into 3 large chunks
- Chicken:
- 4 large chicken breasts
- 2 sleeves Ritz crackers
- 1/4 t salt
- 1/8 t pepper
- 1/2 C milk
- 3 C cheddar cheese, grated
- 1 t dried parsley
- Sauce:
- 1 10 ounce can cream of chicken soup
- 2 T sour cream
- 2 T butter
