Spicy Chicken-Fried Hamburger

In a deep fryer or dutch oven, heat the oil to 375 degrees
- Peanut or other vegetable oil, for frying
- Coarse salt and pepper
- 1 tablespoon sweet paprika
- 1 1/2 teaspoons granulated garlic or garlic powder (about 1/2 palmful)
- 1 1/2 teaspoons granulated onion (about 1/2 palmful)
- 1 teaspoon cayenne (about 1/3 palmful)
- 1 teaspoon ground cumin (about 1/3 palmful)
- 1 1/2 pounds ground beef chuck
- 2 cups flour
- 4 large eggs
- 1 1/2 cups heavy cream
- 4 potato rolls, toasted and buttered
- Lettuce, tomato, red onion, pickles and honey mustard for topping
- 3/4 cup organic ketchup mixed with 2 tbsp. worcestershire sauce (or use barbecue sauce)

- 4 boneless chicken breasts, skin on
- 2 tablespoons olive oil, plus more for breasts
- Coarse salt and freshly ground pepper
- 4 tablespoons unsalted butter, softened
- 2 1/2 tablespoons Dijon mustard
- 3/4 cup coarse breadcrumbs
- 2 tablespoons chopped fresh thyme, plus more for garnish

Basic Guacamole

1. In a medium bowl, mash the avocado flesh with a fork until somewhat chunky (not smooth)

- 1 serrano chile, stemmed and minced
- 1 small clove garlic, minced (optional)
- 2 tbsp. finely chopped white onion
- 2 tbsp. finely chopped seeded tomato
- 2 tbsp. chopped cilantro, plus more for garnish
- 2 –3 tsp. fresh lime juice, plus 1 lime cut into wedges

Herb-Crusted Pork Chops with Broccoli & Onions

Preheat the over to 425. Place a greased rack on a foil-lined baking sheet

- 1 1/2 cups (about 3 oz) fresh whole wheat breadcrumbs
- 3 tbsp chopped flat-leaf parsley
- 2 tbsp grated parmesan cheese
- 4 6-oz 1" thick boneless center cut pork loin chops
- 3 tbsp grainy mustard
- 1/4 red onion, thinly sliced
- 1 bunch broccoli, cut into florets

Grilled Sriracha-Sesame Turkey Meatballs

Preheat the grill to medium-high
- 1 T finely minced garlic
- 1 T finely minced fresh ginger root
- 3 green onions, sliced and then finely chopped
- 1 1/2 lb. ground turkey (use turkey with less than 10% fat for South Beach Diet)
- 1 egg, beaten
- 1/2 cup whole wheat bread crumbs (you can make your own from 100% whole wheat bread)
- 1 1/2 T sesame seeds (I used toasted sesame seeds from the Asian market)
- 2-3 T Sriracha Sauce (I used 3 T, which I thought was pretty spicy but just right)
- 1 tsp. sea salt
- additional sliced green onions and sesame seeds for garnishing finished meatballs (optional)
