Roasted Supper: Mexican Chicken or Fish

1) Position a rack in the center of the oven and preheat to 450 degrees
- Spice Blend
- 1 teaspoon granulated garlic or garlic powder
- 1 teaspoon granulated onion or onion powder
- 1 teaspoon mexican oregano
- 1 teaspoon ancho (mild) or chipotle (hot) chile powder
- salt and pepper
- Chicken or Fish
- 4 pieces (6-8 oz each) skinless, boneless chicken breasts or thick whitefish fillet (such as cod or pollock)
- EVOO for liberal drizzling
- 2 tomatoes, thinly sliced
- 1 small red onion, ,thinly sliced
- 2 cloves garlic, thinly sliced
- 2 jalapeno chile peppers, thinly sliced
- Queso fresco crumbles and a handful of cilantro leaves for garnishing
- Avocado Salad
- 2 avocados, diced
- 1 lime, juiced
- 2 cups baby arugula
Triple-Onion Dip

Heat cast-iron skillet over high for 2 minutes
- 2 tablespoons EVOO
- 2 shallots, thinly sliced
- 3 scallions, white and green parts chopped separately
- 1 teaspoon coarsely chopped fresh thyme
- 1 8 ounce package neufchatel or cream cheese, at room temperature
- 1 cup 2% plain greek yogurt
- 1/2 small red onion, minced
Japanese-Style Crispy Pork

Season the pork with salt
- 1 pound thin-cut boneless pork chops or cutlets, trimmed
- Kosher salt
- 2 tablespoons Chinese rice wine, sake or sherry
- 1 1/2 teaspoons finely grated peeled ginger
- 2 medium cucumbers
- 1/2 to 1 teaspoon sugar
- 2 teaspoons rice wine vinegar
- 1 1/2 teaspoons red pepper flakes
- 3 large eggs
- 2 cups panko (Japanese breadcrumbs)
- 3/4 cup cornstarch
- Peanut oil, for frying
- 1/4 cup tonkatsu sauce (a sweet-spicy Japanese dipping sauce, sold near the soy sauce; or make your own by mixing 2 tablespoons each ketchup, Worcestershire sauce and sugar with 1 tablespoon water.)
Skinny Fettuccine Alfredo

1. In a pot of boiling, salted water, cook the pasta according to package directions
- 8 ounces fettuccine
- 2 tablespoons EVOO
- 2 cloves garlic, finely chopped
- 1 tablespoon chopped fresh sage, plus small whole leaves for garnish
- 2 tablespoons flour
- 1 cup fat-free chicken broth
- 1/2 cup 2% milk
- 1/4 teaspoon pepper
- 1 pinch ground nutmeg
- 3/4 cup grated parmesan, plus more for serving
Italian Meatballs with Bruschetta

1.Preheat the oven to 425°
- BRUSCHETTA TOPPING:
- 2 slices stale good quality white bread, crusts trimmed
- 1/2 cup milk
- 1/4 lb. mixed italian cold cuts (prosciutto, prosciutto cotto, salami mortadella, coppa, etc.)
- 2 tbsp. EVOO1
- 1/4 lbs. ground beef
- Salt and pepper
- 1/2 About 1/2 cup grated parmigiano-reggiano (a couple of generous handfuls)
- 1/4 cup finely chopped flat-leaf parsley
- 2 cloves garlic, grated
- 1 egg
- 5 plum tomatoes, finely chopped
- Salt
- 4 tbsp. finely chopped or grated red onion
- 1 large clove garlic, finely chopped
- A handful flat-leaf parsley, finely chopped
- 12 basil leaves, very thinly sliced
- EVOO, for drizzling
- TO SERVE AS A MEAL add: garlic bread and a salad
Eva Longoria's Tortilla Soup

DIRECTIONS1. Place chiles in small saucepan, cover with water and bring to boil over medium-high heat
- 2 ancho chiles
- 2 pasilla chiles
- 4 medium, ripe tomatoes, roughly chopped
- 1 garlic clove, peeled and smashed
- 2 qrt chicken broth (I use Trader Joe’s low sodium version)
- Salt and freshly ground pepper, to taste
- 1 bunch fresh cilantro, washed and chopped
- Corn or canola oil for frying
- 15 corn tortillas cut into thin strips
- 3 diced avocados
- 1 pkg queso fresco, crumbled
- 1 8 oz. container sour cream (optional)
Pecan-Crusted Chicken with Cilantro Slaw

1. Preheat oven to 400 degrees farenheit 2
- Chicken:
- 1 large egg white
- 1/4 tsp salt
- 1/8 tsp cayenne
- 3/4 cup whole wheat panko bread crumbs
- 1/4 cup finely chopped pecans
- 4 (5-ounce) skinless boneless chicken breasts
- 2 tsp olive oil
- 2 tsp unsalted butter
- Slaw:
- 3 TBSP lime juice
- 1/4 tsp salt
- 1/4 tsp coarsely ground black pepper
- 4 cups shredded green and red cabbage
- 1/2 cup chopped fresh cilantro
Bacon-Wrapped Potatoes With Honey Sauce

Cut each potato lengthwise into 6 wedges
- 2 large Idaho potatoes (about 1/2 pound each)
- 12 slices bacon (3/4 pound)
- 2 cups canola oil
- 2 tablespoons unsalted butter, melted
- 1 tablespoon honey
- 1 tablespoon chopped scallions, white and some green
- 1/2 teaspoon chopped fresh parsley

Zesty Home Fries

1) HEAT oven to 450°F. TOSS potatoes with dressing and pepper in 15x10x1-inch pan sprayed with cooking spray
- 2 lb. red potatoes (about 6), cut into large chunks
- 1/2 cup KRAFT Light Zesty Italian Dressing
- 1/2 tsp. black pepper
- 1 large red onion, cut into chunks
- 1/4 cup chopped fresh parsley
- 2 slices OSCAR MAYER Bacon, cooked, crumbled
- 1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese

- 4 skin-on, bone-in chicken breasts (about 1 1/2 pounds)
