Mix all ingredients together in mixer with whisk on low speed until smooth

- 1 can of 100% pure pumpkin
- 1 can of fat free evaporated milk

Blackberry Cheesecake Bites

Heat oven to 350°F. In food processor, place crackers, almonds and 1/4 cup of the sugar
- 15 graham cracker squares (15 halves of a whole cracker)
- 1/2 cup sliced almonds
- 1 1/4 cups sugar
- 1/3 cup butter or margarine, melted
- 3 packages (8 oz each) dairy free cream cheese, softened
- 2 tablespoons flour
- 1 teaspoon vanilla
- 3 eggs
- 1/3 cup seedless blackberry jam
- 36 fresh blackberries

Using a mixer, gradually add the sugar to the cream cheese, beat well until incorporated
- 1 pound confectioners sugar (powdered sugar)
- 8 ounces, weight cream cheese, softened
- 1/2 teaspoon peppermint extract

- Cream Filling:
- 2 large eggs
- 1 1/2 cups milk

- 1 teaspoon salt

- Chocolate Icing:
- 3 tablespoons butter or margarine
- 3 oz unsweetened baking chocolate
- 3 to 4 tablespoons water
- 1 cup powdered sugar
- 3/4 teaspoon vanilla

Press the cookie dough into a greased 13-in
- 1 batch of made cookie dough
- 1 package (8 ounces) cream cheese, softened
- 1 cup confectioners' sugar
- 2 carton (12 ounces) frozen whipped topping, thawed, divided
- 3 cups milk
- 1 package (3.9 ounces) instant chocolate pudding mix
- 1 package (3.4 ounces) instant vanilla pudding mix
- Chopped nuts, optional
Mexican Rice Casserole

This rice dish can also be used as burrito filling!
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 large onion, chopped
- 1-2 jalapenos finely chopped and seeded
- 4 cups instant brown rice
- Two 14.5-ounce cans diced tomatoes
- One 10-ounce can diced tomatoes and green chiles
- 1 teaspoon cumin (or more to taste)
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon turmeric
- 6 to 8 cups low-sodium chicken broth

- 12 ounces of whole wheat and regular spaghetti noodles
- 1/4 cup reduced sodium soy sauce
- 1 tablespoon plus 1 teaspoon cornstarch
- 2 teaspoon sugar
- 2 tablespoons rice vinegar
- 1 cup low sodium chicken broth
- 1 package thin cut boneless pork chops cut into strips
- 2 teaspoon olive oil
- 4 cups thinly sliced cabbage
- 1 medium carrot, grated
- 1 cup snow peas, halved
- salt and pepper to taste (optional)
