Gluten-Free Pumpkin Spice Bars

light and fluffy bars with a kick of ginger
- 2 large free-range organic eggs
- 1/3 cup extra light olive oil or vegetable oil
- 1 cup light brown sugar, packed
- 1 cup pumpkin puree* (canned is fine)
- 1 T vanilla extract
- 1 and 3/4 cups gluten-free flour mix
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon xanthan gum (if already included in your flour blend, omit)
- 1 teaspoon cinnamon
- 1 teaspoon Pumpkin Pie Spice- or a blend of nutmeg, cloves, allspice, ginger
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/3 cup finely chopped crystallized ginger
Gluten-Free Pie Crust

1. Measure dry ingredients into a large mixing bowl
- 1 1/4 cup superfine white rice flour
- 1/2 cup arrowroot starch OR cornstarch
- 1/4 cup amaranth flour
- 1 tbsp cane sugar (OMIT sugar if making a savory filling)
- 1/4 tsp xanthan gum OR guar gum
- 1/4 tsp salt
- 1 tbsp ice water
- 1 large, lightly beaten egg
- 12 tbsp cold, cubed butter
- (12 tbsp of butter = 1 & 1/2 sticks of butter OR 3/4 cup of butter)
Wild Rice Salad (with or without chicken)

- 1 cup long-grain wild rice
- 1/2 cup dried cherries, cut into small pieces
- 3/4 cup diced green onions
- 1/4 cup Marzetti's Simply Dressed Balsamic dressing (may need to add more dressing after refrigerating for 4 hours or more)
- 1/2 cup pine nuts, toasted.
- Optional: diced cooked chicken breast
Cool Cucumber Smoothie

Put ingredients in blender and process until smooth
- 1/2 avocado
- 3/4 cup chopped English cucumber
- 2 tbsp honey
- 2/3 cup low-fate vanilla yogurt
- 1/2 cup soy milk
- 1 tbsp lemon juice
- 1 1/2 cup ice
Autumn Apple Coffee

- 2 cinnamon sticks
- 2 thin slices of orange, rind intact
- 2 whole cloves
- 1 kernel allspice or 1/4 teaspoon ground allspice
- 2 teaspoons brown sugar or wildflower honey
Baked Oatmeal

- 1/2 cup walnuts, chopped
- 1/3 cup sugar or syrup
- 1 1/2 tsp cinnamon
- 1 tsp baking powder
- less than 1/2 tsp salt
- 2 cups milk
- 1 egg
- 3 tbsp butter, melted
- 2 tsp vanilla
- 1-2 bananas, cut into 1-inch pieces
- 1 1/2 cup blueberries
Stuffed Pork Chops

- Stuffing:
- 4 double-thick pork chops
- 1 slice of bread per pork chop, cut into pieces
- 1 egg per pork chop
- 5 oz canned corn with juice
- some apple pieces
- 1/2 tspsage
Bread and Butter Pickles

- 3 onions, thinly sliced
- 1/4 cup coarse salt
- 4 cups cracked ice
- 2 1/2 cups cider vinegar
- 2 1/2 cups sugar
- 3/4 teaspoon turmeric
- 1/2 teaspoon celery seed
- 1 tablespoon mustard seeds
Ground Cherry Preserves

To a quart saucepan, add cherries, lemon juice, water and Sure-Jel
- 3 cups ground cherries
- 1/4 cup lemon juice
- 1/2 cup water
- 3 cups sugar
- 1 box pectin (Sure-Jel)
Russian Tea

- 2 qt package of lemonade with sugar
- 1 oz instant tea without sugar
- 2 cup sugar
- 2 - 4 tsp cinnamon
- 2 - 4 tsp cloves
