Cake Mix: Peanut Butter Chip Cupcakes

Moist, fluffy and easy to make
- For cupcakes:
- 1 box classic yellow cake mix
- 1 small box chocolate pudding mix
- 4 eggs, at room temperature
- 3/4 cup cooking oil
- 1/3 cup sour cream
- 1 cup warm water
- 1 cup peanut butter chips, chopped
- For peanut butter cream topping:
- 1 package (8 oz.) cream cheese, at room temperature
- 1 cup powdered sugar
- 1/2 cup creamy peanut butter
- 1 cup whipped cream
- 4 Tbsp. butter, at room temperature
Cassava Bites

Cassava is also called Yuca
- 1 bag (16 oz.) frozen grated cassava, defrost to room temperature
- 1 can (13 oz.) coconut milk
- 1 cup sugar
- 1/2 tsp. lye water (optional)
- 1/2 tsp. pandan essence (or use vanilla extract)
- Fresh grated coconut (or sweetened shredded coconut) for coating
Ono Lemon Bars

This is not an ordinary Lemon Bar
- 2 cups Flour
- 1 cup butter
- 1/2 cup powdered sugar
- 1 pkg. of Cream Cheese (8 oz.), soften
- 4 eggs
- 2 cups sugar
- 4 Tbsp. flour
- 6 Tbsp. Lemon juice
- 1 tsp. baking powder
- pinch of salt
- Powdered sugar for dusting to decorate the bars

- FILLING:
- 1 pound ground beef
- 1 pound ground pork
- 4 green onions, minced
- 1 medium carrot, shredded
- 1/4 cup sugar
- 1/4 cup soy sauce
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 packages spring roll wrappers (25 pieces per pack) room temperature
- 1 egg yolk (for sealing the edge when wrapping)
- Cooking Oil for frying

- 1 lb. ground pork
- 1/3 cup light soy sauce
- 1/4 cup sugar
- 1 cup water or chicken broth
- 4 cups chives, chopped finely
- 2 cups Napa cabbage, diced/chopped finely
- 2 tsp. sesame oil
- 2 Tbsp. Mayo
- 2 Tbsp. Ketchup
- 2 packages of Gyoza wrappers, round, at room temperature
- Cooking oil

- 1 Tbsp. milk
- 1/4 cup sugar (use less if you like less sweet)
- 1/4 cup raisin (or dry cranberries)

- 1 1/2 cups powdered sugar
- 1/2 cup flour
- 1 cup almond meal
- 1 1/2 sticks butter, melted
- 6 egg whites
- 1 can (14 oz.) canned peach slices, drained and chopped
- extra powdered sugar for dusting if you prefer

- 2 cups Cooked dumplings
- 1 cup cooked Fajita Beef or cooked Chicken
- 1 Roman lettuce, chopped.
- 2 Tbsp. cooking oil
- 2 Tbsp. water
- 1 Tbsp. Soy Sauce
- 1/2 Tbsp. sugar
- Pinch of salt and black pepper to taste

found this delicious and healthy recipe from Lyn-Genet Recitas' book named "the Plan"
- 1 can coconut milk (pls. don't use low-fat)
- 1 large onion, chopped or sliced
- 3-4 cloves garlic, chopped
- 1 Tbsp. Thai red curry sauce
- 1 heaping Tbsp. brown sugar
- pinch of salt to taste
- 1 big bag of chopped kale, about 10-12 cups
- 4-6 shiitake mushrooms, soften in the water and sliced

- 2 packages of Cream Cheese, 8 oz. each, soften
- 3/4 cup sugar
- 2 Eggs
- 1 Egg white
- 2 Tbsp Green Tea Powder (can be purchased from Asian Grocery Stores)
- 1 drop Green food color
