- 1 pound ground chicken or turkey breast
- 1 teaspoon fennel seed, 1/3 palmful
- 1 small onion, finely chopped

- 1 lemon, zested
- 1 cup shredded asiago cheese
- 1/2 cup breadcrumbs, a couple handfuls
- 1 10 -ounce box frozen chopped spinach, defrosted and wrung dry in a clean kitchen towel

- Half cup Lotta Bull BBQ Red Dirt Championship BBQ Seasoning, recipe follows:
- 1 4- to 5-pound brisket
- 2/3 cup salt
- 1/2 cup granulated sugar
- 1/3 cup garlic salt
- 1/3 cup smoked paprika
- 8 teaspoons brown sugar
- 4 teaspoons cracked black pepper
- 2 teaspoons cumin
- Combine the salt, granulated sugar, garlic salt, smoked paprika, brown sugar, black pepper and cumin in a bowl and mix until well blended.
