In a medium bowl or food processor, sift together flour, sugar and salt
- Pastry:
- 2 cups all-purpose flour
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 1 egg
- 1 1/2-2 tablespoons milk
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 cup jam or fruit preserves
- Glaze:
- 1 splash water
- 1 egg
- 1 cup powdered sugar
- 2 tablespoons heavy cream
- 1 tablespoon strawberry jam
- red food coloring (1-2 drops; use sparingly to make pink frosting)
- candy sprinkles/decorating sugar
- 1/2 teaspoon lemon juice
Beef Empanadas

Beef empanadas are a dish of Spanish and Portuguese origin
- Ingredients
- FILLING
- 1 large slice hearty white sandwich bread, torn into quarters
- 2 tablespoons plus 1/2 cup low-sodium chicken broth
- 1 lb lean ground beef chuck
- salt and pepper
- 1 tablespoon olive oil
- 2 medium onions, chopped fine (about 2 cups)
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 1/2 teaspoons hot paprika
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon ground cloves
- 3/4 teaspoon dried oregano
- 1/2 cup cilantro leaves, coarsely chopped
- 2 hard-cooked eggs, coarsely chopped
- 1/3 cup raisins, coarsely chopped
- 1/4 cup pitted green olives, coarsely chopped
- 4 teaspoons cider vinegar
- DOUGH
- 3 cups unbleached flour
- 1 cup masa harina (or unbleached flour as substitute)
- 1 tablespoon sugar
- 2 teaspoons salt
- 12 tablespoons unsalted butter, chilled and cut into 1/2" cubes
- 1/2 cup cold vodka
- 1/2 cup cold water
- 5 tablespoons olive oil
Yamburgers - Vegan

- For the chipotle/cilantro cream:
- Yamburgers with Chipotle Cilantro Cream and Yam Fries
- (Vegan and gluten-free – makes 8-10 patties)
- 2 large sweet potatoes (about 2 lbs.), cut into 1/2 inch cubes
- 15 oz. black beans, drained
- 1 cup sweet corn
- 1/2 onion, finely chopped
- 3/4 cup quinoa, cooked
- 1/2 cup rolled oats (or almonds)
- 2-3 cloves garlic, minced
- 1 TBSP cumin
- 1 tsp. chili powder
- 1/2 tsp. coriander
- 1/2 tsp. paprika
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1/4-1/2 tsp. crushed red pepper flakes, or cayenne (more or less to taste)
- 1/4 tsp. cracked black pepper
- Oil for pan frying.
- 2 cups raw cashews, soaked in water (can be replaced with 1.5 cups vegan sour cream or mayonnaise)
- 2 chipotle peppers in adobo sauce
- 2 limes, juiced
- 2 cloves garlic
- 1/2 cup fresh cilantro, packed
- Pinch of salt
- For the fries:
- 2 sweet potatoes
- 2 TBSP olive oil
- 1 tsp. cumin
- 1/2 tsp. salt
- 1/4 tsp. cayenne
- a few grinds black pepper
Coconut Shrimp Beignets with Pepper Jelly Sauce

- Canola oil or other neutral vegetable oil, for deep frying
- 1 cup pepper jelly (we use Tabasco brand)
- 2 tablespoons Creole mustard or any country-style whole-grain mustard
- 2 tablespoons champagne vinegar (apple cider vinegar is a good substitute)
- 2 cups all-purpose flour
- 1 cup shredded sweetened coconut
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/4 cup very thinly sliced green onions, white and green parts
- 1 (12-ounce) bottle of amber beer (we use Abita amber, but any amber will do)
- Water (optional)
- 1 pound small shrimp, peeled and deveined

- Dough:
- 1 cup milk
- 2/3 cup granulated sugar
- 2 packets active dry yeast (1 1/2 tbs)
- 1 stick (4oz) unsalted butter, softened
- 2 large eggs
- 1/4 tsp salt
- 4 1/4 to 4 1/2 cups all-purpose flour
- Filling:
- 10 oz frozen raspberries (not thawed)
- 1/4 cup plus 2 tbs sugar
- 1 tsp cornstarch
- Glaze:
- 3/4 cup confectioners' sugar
- 3 tbs unsalted butter, melted
- 1 1/2 tbs heavy cream
Cherry Chia Seed Pudding

- 2 1/2 cups unsweetened almond milk
- 1/2 cup bing cherries, pitted and halved
- 1/2 teaspoon ground cardamom

- 1/2 cup chia seeds
GF Pizza Crust (Paleo)

Preheat oven to 450 degrees F
- 1 cup tapioca flour or arrowroot powder (I use THIS)
- 1/2 teaspoon sea salt
- optional: 3 tablespoons Romano or Parmesan cheese (I omit for dairy-free and prefer it omitted, but my husband likes his better with it in so you pick!)
- 1/3 cup avocado oil, olive oil, or other fat of choice (I use THIS)
- 1/3 cup water
- 1 tablespoon apple cider vinegar
- 1 clove garlic, finely minced
- 1 egg
- 1/3 cup coconut flour (find HERE)
- optional: 1 teaspoon Italian seasoning

- 1 cup white wine for soaking the wood planks
- 2 tablespoons grainy mustard
- 2 tablespoons mild honey
- 1 teaspoon minced fresh rosemary
- 1 teaspoon minced fresh dill
- 1 tablespoon grated lemon zest
- 3 teaspoons sesame seeds (optional)
