- Ingredients
- 1 1/4 cup gluten-free organic All Purpose Baking Mix from The Pure Pantry
- 3/4 cup gluten-free organic Buckwheat-flax Baking Mix from The Pure Pantry
- 1/2 cup maple sugar or light brown sugar
- 1 3/4 teaspoon cinnamon
- 1/2 cup plus 1 tablespoon coconut oil or non-hydrogenated shortening, such as Spectrum
- 3 tablespoons cold water
- 3 tablespoons agave nectar, preferably Nature’s Agave Amber variety
- 1 teaspoon vanilla
- Sugar for sprinkling on top
Pumpkin or Jack-O-Lantern Pancakes

You may be tempted to think pumpkin would make a dense and heavy pancake but you would be wrong in this case
- Ingredients:
- 1 cup Jules Gluten Free™ All-Purpose Flour
- 3 Tbs. dairy or non-dairy milk powder (Dari-Free® Milk Powder) OR almond meal
- 1 Tbs. granulated cane sugar
- 2 1/2 tsp. gluten-free baking powder
- 1 1/2 tsp. pumpkin pie spice
- 1/2 tsp. salt
- 1 cup apple cider (not apple cider vinegar!) or apple juice or orange juice
- 6 Tbs. pumpkin purée
- 2 Tbs. vegetable oil
- 1 egg (or favorite egg replacer)
- 1/4 cup chopped pecans (optional)
- high heat oil for frying (unless using non-stick pan)
- chocolate chips if making Jack-O-Lantern Pancakes (Enjoy Life® allergen-free mini chocolate chips)

- BISCUIT TOPPING:
- 3 cups fresh or frozen blackberries
- 1 cup sugar
- 1/4 teaspoon ground cinnamon
- 3 tablespoons cornstarch
- 1 cup cold water
- 1 tablespoon butter
- 1-1/2 cups all-purpose flour
- 1 tablespoon sugar
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 1/2 cup 2% milk
- Whipped topping or vanilla ice cream, optional

1. In a small bowl, combine wafer crumbs, butter and lemon peel
- Crust:
- 1-1/2 cups crushed vanilla wafers (about 45 wafers)
- 1/4 cup butter, melted
- 1 teaspoon grated lemon zest
- Filling:
- 2 pounds fresh, whole-milk ricotta cheese
- 2/3 cup white sugar
- 1/3 cup all-purpose flour
- 6 eggs
- 1/4 teaspoon ground cinnamon
- 2 teaspoons grated lemon zest
- 2 teaspoons vanilla extract
- 1/8 teaspoon salt

- 1 c white rice flour (sweet rice flour can be used for pastries)
- 1 c potato starch
- 1 c cornstarch
- 1/2 c corn flour
- 1/2 c tapioca flour
- 4 tsp. xanthan gum

- Peach Crisp Filling:
- 6 fresh peaches, peeled and chopped
- 1 cup sugar
- 1/2 tsp. cinnamon
- 2 eggs beaten
- Juice from one lemon (I used a lime because I didn’t have a lemon on hand)
- 1/2 cup of flour
- Graham Cracker Crust:
- 16 graham crackers crushed
- 6 tablespoons melted butter
- 2 tablespoons sugar
- Crumble Topping:
- 1 1/4 cups flour
- 1/2 cup brown sugar
- 1/4 tsp. salt
- 1/4 tsp. cinnamon
- one stick of butter, melted
- Preheat oven to 350 degrees.
