Baked Chicken and Rice With Black Beans

Preheat oven to 350º. Prepare rice according to package directions
- 1 (10 oz) pkg. yellow rice mix
- 1 c chopped onion
- 1/2 c chopped green bell pepper
- 1/2 c chopped carrot
- 1 Tbsp olive oil
- 2 c cubed cooked chicken
- 1 (15 oz) can black beans, drained
- 1 (10 oz) can diced tomatoes and green chiles, undrained
- 2 c (8 oz) grated Monterey Jack cheese
Easy Red Bean and Rice with Sausage

In a large Dutch oven, heat 1 Tbsp oil over medium-high heat
- 3 Tbsp vegetable oil, divided
- 1 lb smoked sausage (the recipe called for Conecuh Hickory Smoked sausage), sliced 1/2 inch thick.
- 1/2 c chopped yellow onion
- 1/2 c chopped celery
- 1/2 c chopped green bell pepper
- 2 tsp minced garlic
- 1 (15 oz) can dark red kidney beans, rinsed and drained
- 1 (15 oz) can light red kidney beans, rinsed and drained
- 2-1/2 tsp Creole seasoning
- 1 Tbsp chopped fresh thyme
- 2 tsp paprika
- hot cooked rice, to serve
Fried Egg and Avocado Sandwich

Spread cream cheese over 1 piece of toast
- 2 Tbsp cream cheese, softened
- 1 slice wheat bread, toasted
- 1/2 tsp minced fresh parsley
- 1/2 tsp minced green onion
- 2 slices bacon
- 1 large egg
- 1/8 tsp salt
- 1/8 tsp ground black pepper
- 2 slices tomato
- 1/2 avocado, peeled, pitted and sliced
Grilled Prosciutto-Cheddar Sandwiches with Onion Jam

For jam, placed onions and wine in a large skillet; bring to a boil
- Onion Jam:
- 2 large sweet onions, sliced
- 1 c dry red wine
- 2 Tbsp honey
- 1 Tbsp red wine vinegar
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp salt
- 1/4 tsp pepper
- 4 tsp apricot preserves
- Sandwiches:
- 8 slices cinnamon-raisin bread
- 8 thin slices prosciutto or deli ham
- 4 slices aged cheddar cheese
- 3 Tbsp butter, softened
Root Beer Pot Roast

Sprinkle roast evenly with 1 teaspoon salt and 1/2 teaspoon pepper
- 1 (4-pound) eye of round roast
- 1 1/2 teaspoons salt, divided
- 1 teaspoon pepper, divided
- 1 tablespoon vegetable oil
- 1 large onion, thinly sliced
- 1 (12-ounce) bottle root beer (not diet)
- 1 (12-ounce) bottle chili sauce

Tear off 4 (18- x 12-inch) sheets of aluminum foil; lightly grease 1 side of each sheet
- 4 skinned and boned chicken breasts
- 2 teaspoons vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup salsa
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (11-ounce) can whole kernel corn, drained (optional)
- 1 cup (4 ounces) shredded Mexican cheese blend, Cheddar, or Monterey Jack cheese

Monkey Bread Bites

Combine 1/4 c granulated sugar and 1 Tbsp cinnamon in a large bowl
- 1/2 c granulated sugar
- 1 Tbsp ground cinnamon
- 1 (12 oz) can refrigerated buttermilk biscuits
- 1 (6 oz) can refrigerated buttermilk biscuits
- 1/2 c plus 2 Tbsp butter
- 1/4 c firmly packed light brown sugar
- 1 tsp vanilla extract
- 1/2 c chopped pecans, toasted
- Extra large foil muffin cups
Beef and Broccoli Lo Mein

Sprinkle beef with salt and pepper, and add to a 4- to 5-quart slow cooker
- 2 lbs stir-fry beef strips
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/2 c hoisin sauce
- 1/2 c beef broth, divided
- 2 Tbsp rice vinegar
- 1-1/2 tsp minced garlic
- 1/4 tsp crushed red pepper
- 2 Tbsp cornstarch
- 1 (12 oz) pkg steam-in-the-bag fresh broccoli, cooked according to package directions
- 2 (8 oz) pkgs wide lo mein noodles, cooked according to package directions
Grilled Honey-Glazed Pork Chops

Cut two slits about 2 inches apart through fat and connective tissue around outside of each chop
- 4 (10 oz) bone-in pork or center-cut chops, about 1 inch thick, trimmed
- 1/4 c sugar
- 1 tsp salt
- 1 tsp pepper
- 2 Tbsp cider vinegar
- 1/2 tsp cornstarch
- 1/4 c honey
- 1-1/2 Tbsp Dijon mustard
- 1/2 tsp minced fresh thyme
- 1/8 tsp cayenne pepper
