Cod & Asparagus Bake

Preheat oven to 375º. Place cod and asparagus on a 15x10x1-inch baking sheet brushed with oil
- 4 cod fillets (4oz each)
- 1 fresh thin asparagus
- 1 pint cherry tomatoes, halved
- 2 Tbsp lemon juice (I thought that was a bit too much)
- 1-1/2 tsp grated lemon zest (I didn't use this)
- 1/4 c grated Romano cheese
- I doubled this recipe and it was barely enough for us.
Grape Salad

Thoroughly wash and dry your grapes
- Topping:
- Grape Salad
- 4 - 6 pounds of white seedless grapes
- 8 oz. cream cheese
- 8 oz. sour cream
- 1/2 cup powdered sugar (you can cut carbs and use Splenda if you want)
- 1 1/2 tsp. pure almond extract
- 1 tsp. pure vanilla extract
- 1/2 cup brown sugar
- 1/2 cup coconut
- 1/2 cup toasted slices almonds (or any nuts of your choosing)

- 2 (8 oz) cans refrigerated crescent rolls
- 1/4 c butter, melted
- 2 Tbsp whole-grain Dijon mustard
- 1 Tbsp Worcestershire sauce
- 1 (8 oz) package sliced provolone cheese
- 1/2 lb thinly sliced deli ham
- 1/2 lb thinly sliced deli turkey
- 1/2 lb thinly sliced deli roast beef
- 1 (8 oz) package sliced mozzarella cheese
- Sesame seeds
Italian Wedding Soup

In a large bowl, combine the first 10 ingredients
- MEATBALLS:
- 2 eggs, lightly beaten
- 1/3 c grated Parmesan cheese
- 1/4 c dry bread crumbs
- 2 Tbsp minced fresh parsley
- 2 Tbsp 2% milk
- 4 garlic cloves, minced
- 4 tsp grated onion
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp grated lemon peel
- 1-1/2 lbs ground chicken
- SOUP:
- 2 Tbsp olive oil
- 4 medium carrots, chopped
- 4 celery ribs, chopped
- 2 small onions, chopped
- 6 garlic cloves, minced
- 4 cartons (26 oz each) chicken stock
- 1 tsp salt
- 1 tsp pepper
- 1-1/2 c acini di pepe pasta (I used ditalini)
- 2 pkg (10 oz each) fresh spinach
- Additional minced fresh parsley and grated Parmesan cheese
One-Pan Potatoes and Chicken Santa Fe

While potatoes cook, in a large skillet toss and brown chicken in oil over high heat - 5 minutes
- 4 medium potatoes, cut into 3/4" cubes and microwaved 8-10 minutes until tender
- 1 lb boned and skinned chicken breasts, cut into 3/4" cubes
- 2 Tbsp olive oil
- 1 c prepared tomato salsa
- 1 small can whole kernel corn, drained
Hunter's Minestrone

Bring a pot of salted water to a boil for the rigatoni
- Kosher salt
- 10 cups chicken broth
- 8 garlic cloves, whacked with the side of a large knife, plus 3 cloves,
- chopped
- 1/4 lb small rigatoni
- extra virgin olive oil
- 8 fresh sage leaves
- needles from 1 fresh rosemary sprig
- 2 medium carrots, finely chopped
- 2 celery stalks, finely chopped
- 1 onion, finely chopped
- 3/4 lb bulk sausage
- 1 can (28oz) plum tomatoes, drained and chopped
- 2 cans (28oz each) cannellini beans

- 4 Tbsp butter - softened

Cuban-Style Pork Chops

- Optional ingredients:
- 1 Tbsp Dijon mustard
- 1 Tbsp lime juice
- 1 tsp adobo seasoning
- 4 boneless pork loin chops (4 oz each)
- 4 slices deli ham (about 3 oz)
- 4 slices Swiss cheese
- 2 Tbsp chopped fresh cilantro

In a large Dutch oven, combine broccoli, potatoes and carrots; add water to cover
- 4 c small broccoli florets (about 2 heads)
- 4 c red potatoes - chopped in 1" cubes
- 2 c thinly sliced carrots
- 1/4 c butter
- 8 oz package sliced baby bella mushrooms
- 1/2 c chopped red bell pepper
- 1 shallot, minced
- 1/3 c all-purpose flour
- 2 c chicken broth
- 2 c half-and-half
- 2-1/2 c chopped cooked chicken
- 1-1/2 c frozen green peas, thawed
- 1 Tbsp minced fresh thyme
- 1 tsp salt
