Grilled Chicken and Pineapple Sandwiches

In a shallow dish, stir together reserved pineapple juice, soy sauce, and pepper
- 1 (20 oz) can pineapple rings in juice, drained and juice reserved
- 3 Tbsp soy sauce
- 1 tsp ground black pepper
- 2 lbs boneless skinless chicken breasts, halved lenthwise
- 1/2 c mayonnaise
- 1/4 c fresh basil
- 2 Tbsp stone-ground mustard
- 1 lb thinly sliced deli honey ham
- 6 slices Monterey Jack cheese
- 6 hamburger buns, halved horizontally and toasted
Bourbon BBQ Sauce

In a small saucepan, bring the BBQ sauce ingredients to a boil
- 1 cup ketchup, preferable organic
- 1/4 cup chicken stock
- 2 shots (about 1/4 cup) bourbon
- 3 tablespoons worcestershire sauce
- 3 tablespoons brown sugar
- 3 tablespoons cider vinegar
- 2 cloves garlic, minced
- coarse black pepper
Cheesy Caramelized Onion and Bacon Dip

Preheat oven to 350º. Spray a 2-qt baking dish with nonstick cooking spray
- CARAMELIZED ONIONS:
- 2 (8 oz) packages cream cheese, softened
- 2 cups shredded Gruyere cheese
- 1/2 c sour cream
- 1/2 c mayonnaise
- 10 slices bacon, cooked and crumbled
- Caramelized Onions (recipe follows)
- Crunch Topping (recipe follows)
- 1/4 c butter
- 3 large onions, thinly sliced
- 1 Tbsp balsamic vinegar
- 1/4 tsp salt
- 1/2 tsp ground black pepper
- CRUNCHY TOPPING:
- 3/4 cup crushed buttery round crackers (about 15)
- 2 Tbsp shredded Parmesan cheese
- 1 Tbsp chopped fresh parsley
- 1 slice bacon, cooked and crumbled
Potato Soup

Place first nine ingredients in a 5- or 6-quart slow cooker
- 3 lbs potatoes, peeled and cut into 1/2-inch cubes (8 cups)
- 1 large onion, chopped
- 1 jar (7 oz) roasted sweet red peppers, drained and chopped
- 1 small celery rib, chopped
- 6 c chicken broth
- 1/2 tsp garlic powder
- 1/2 tsp seasoned salt
- 1/2 tsp rubbed sage
- 1/3 c all-purpose flour
- 2 c heave whipping cream, divided
- 1 c grated Parmesan cheese, divided
- 8 bacon strips, cooked and crumbled
- 2 Tbsp minced fresh cilantro

Brick-Grilled Cornish Hens

- 8 (1 1/2- to 1 3/4-lb.) Cornish hens
- 3 tablespoons kosher salt
- 3 tablespoons freshly ground black pepper
- 3 tablespoons minced garlic
- 3 tablespoons chopped fresh rosemary
- 1 tablespoon dried crushed red pepper
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 8 aluminum foil-wrapped bricks*
- Garnishes: lemon wedges, flatleaf parsley sprigs
Risotto - Lisa Tuchel's Grandma's Recipe

Prepare the asparagus by breaking off and discarding the tough ends (about the last inch of the spear)
- 1-1/2 lb asparagus (or other veggies)
- 7 Tbsp plus 2 tsp butter
- 1/2 c chopped shallots (heaping)
- 2-1/2 c arborio rice
- 1-1/2 c dry white wine (or 1 Tbsp lemon juice and 1/4 c water) (She just uses 1 small bottle of wine plus enough chicken broth to make 1-1/2 cups)
