- 8 cups chopped romaine lettuce
- 2 c shredded cooked chicken
- 1 red bell pepper, seeded and sliced into strips
- 1 Granny Smith apple, cored and cut into strips
- 1 (8-1/4 oz) can mandarin oranges, drained
- 1 c crispy rice noodles
- 1/4 c chopped green onion
- 1/4 c sesame oil
- 1/4 c extra-virgin olive oil
- 1/4 c rice wine vinegar
- 2 limes, zested and juiced
- 2 Tbsp sugar
- 1 tsp salt
Potatoes with Chorizo and Onions

Heat a medium skillet over medium high heat
- 2 tablespoons extra virgin olive oil, 2 turns of the pan
- 3/4 pound, 1 package, chorizo, very thinly sliced on an angle, pull away any loose casings
- 6 small Yukon gold potatoes, very thinly sliced
- 1 medium onion, very thinly sliced
- Salt and pepper
- 2 teaspoons sweet paprika
- 1/4 cup chopped flat-leaf parsley, a generous 1 or 2 handfuls
