Country Chicken and Corn Stew

Warm oil in a large sauce pan over medium heat
- 1 Tbsp extra virgin olive oil
- 1 medium onion, finely chopped
- 20 oz frozen corn, thawed
- 14-1/2 oz can chicken broth
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 c milk
- 1-1/2 tsp cornstarch
- 2 - 9-3/4 oz cans chunk white chicken, drained

- 2 tablespoons extra-virgin olive oil, 2 turns of the pan

- 1 (28-ounce) can fire roasted diced tomatoes - drain REALLY well
- 1/2 cup chopped pitted good quality black olives

- 1 prepared thin crust pizza shell (recommended: Boboli)
- 3/4 pound very thinly sliced fresh or fresh smoked mozzarella
