Savory Slow-Cooked Chicken Cacciatore

Heat the oil in a 12-inch skillet over medium-high heat
- 1 tablespoon olive oil
- 3 pounds chicken parts, skin removed
- 4 cloves garlic, minced
- 2 teaspoons Italian seasoning, crushed
- 1 (28 ounce) can crushed tomatoes in puree
- 1 pound mushrooms, cut in half
- 2 medium onions, chopped
- 1 medium green pepper, cut into 2-inch-long strips
- 1 1/2 cups Swanson® Chicken Stock
- 1/4 cup cornstarch
- 1 (16 ounce) package pappardelle pasta or fettuccine, cooked and drained
Door County Cherry and White Chocolate Scones

1. Heat oven to 425 degrees
- 2 cups flour
- 1/4 cup sugar
- 2 tsps. baking powder
- 1/8 tsp. salt
- 1/2 stick ( 1/4 cup) plus 1 Tbsp. plus 1 tsp. unsalted
- butter, chilled, cut into pea-sized pieces
- 1/2 cup dried cherries, coarsely chopped
- 1/2 cup white chocolate chunks or white chocolate

- 1/2 cup whipping cream
- 1 1/2 tsps. vanilla
- 1 tsp. water 3 Tbsps. raw or granulated sugar
Seared Salmon with Strawberry Basil Relish

Brush fillets with melted butter; sprinkle with salt and pepper
- RELISH:
- 6 salmon fillets (4 oz each)
- 1 Tbsp butter, melted
- 1/4 tsp salt
- 1/8 tsp pepper
- 1-1/4 c finely chopped fresh strawberries
- 1 Tbsp minced fresh basil
- 1 Tbsp honey
- Dash freshly ground pepper

In a large skillet, melt 4 tablespoons butter over medium heat
- 6 tablespoons butter, divided
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped Canadian-style bacon
- 8 large eggs, lightly beaten
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup drained pineapple tidbits, divided
- 1/2 cup shredded Monterey Jack cheese, divided
- Garnish: fresh parsley, orange slices, raspberries
Grape Salad

Thoroughly wash and dry grapes
- Topping:
- 4-6 lbs white seedless grapes
- 8 oz cream cheese
- 8 oz sour cream
- 1/2 c powdered sugar (or Splenda)
- 1-1/2 tsp pure almond extract
- 1 tsp pure vanilla extract
- 1/2 c brown sugar
- 1/2 c shredded coconut
- 1/2 c toasted sliced almonds
Sausage and Sweet Potato Skillet Hash

In a large Dutch oven, bring potatoes, 2 tsp salt and water to cover by 2 inches to a boil over medium high heat
- 3 large sweet potatoes, peeled and cubed
- 2-3/4 tsp kosher salt, divided
- 4 Tbsp unsalted butter, divided
- 1 (14 oz) package smoked kielbasa sausage, (I used 2 packages) halved lengthwise and cut into 3-inch pieces
- 1 small red onion, cut into 1/2-inch pieces
- 1 large yellow bell pepper, seeded and cut into 1/2-inch pieces
- 1 c mushrooms, quartered (I didn't use them)
- 3 cloves garlic, minced
- 1/2 tsp ground black pepper
- Garnish: chopped green onion
Pineapple-Teriyaki Glazed Chicken & Ginger-Green Onion Rice

Preheat oven to 375º. In a large ovenproof skillet, heat oil over medium-high heat
- Pineapple-Teriyaki Glazed Chicken:
- 1 Tbsp vegetable oil
- 4 chicken quarters (I used chicken breasts)
- 1 tsp salt
- 1/2 tsp ground pepper
- 3/4 c pineapple preserves
- 1 Tbsp teriyaki sauce
- Ginger-Green Onion Rice:
- 2 (8.5 oz) packages fully cooked basmati rice, heated according to package directions
- 1/2 c chopped green onions
- 1/3 c finely chopped red bell pepper
- 1 Tbsp butter
- 3/4 tsp salt
- 3/4 tsp ground ginger
- 1/4 tsp ground black pepper
