marinade of choice. Recommend ½ cup olive oil, ½ cup lemon juice, crushed garlic, fresh oregano, salt and pepper.

1. Prepare chicken by cutting in half - cut out spine, cut down breast bone, cut off wing tips. 2. Marinate chicken at least 1/2 day. 3. Grill over medium heat, 15 min per side, placing pan on top of chicken and brick on top of pan. Check for doneness after 30 total minutes on grill. Don't overcook! 4. Remove from heat and cover with foil. Let rest for 5-10 min. Should be tender and juicy. 5. Serve with marinated grilled or roasted seasonal vegetables and perhaps a rice pilaf?
