I found this recipe on the food blog, Cooking Classy
- 2 boneless skinless chicken breasts, trimmed, halved horizontally, and pounded to 1/2-inch thick
- 2 ounces shredded whole milk mozzarella cheese (1/2 cup)
- 2 ounces shredded provolone cheese (1/2 cup)
- 1 large egg
- 1 tablespoon all-purpose flour
- 1/2 cup panko bread crumbs
- 1 1/2 ounces finely shredded romano cheese (1/2 cup)
- 1 tablespoon chopped fresh oregano
- 1 lemon, zest of (2 tsp)
- 1/2 teaspoon garlic powder
- salt & freshly ground black pepper
- 2 1/2 tablespoons vegetable oil
- 2 1/2 tablespoons extra virgin olive oil
- lemon slice, for serving (you can just use the one that was zested)

1) in a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds
- 1 ) half cup butter, softened
- 2 ) 1 cup packed brown sugar
- 3 ) 2/3 cup unsweetened cocoa powder
- 4 ) 1 tablespoon instant coffee crystals
- 5 ) 1 teaspoon baking soda
- 6 ) 1 teaspoon ground cinnamon
- 7 ) two egg whites
- 8 ) 1 1/2 cups all-purpose flour
- 9 ) 1/3 cup granulated sugar
- 10 ) 2 tablespoons unsweetened cocoa powder
- 11 ) if desired, add 1/3 cup unsweetened or sweetened shredded coconut to the dough
- 12 ) you can also add a handful of shredded coconut to the cocoa sugar mixture that you roll the dough in
