Apple Cinnamon Bread

1. Preheat the oven to 350 degrees F
- Topping:
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon all spice
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1/4 cup canola oil
- 1/4 cup applesauce
- 1 teaspoon vanilla
- 1 cup granulated sugar
- 2 cups chopped apples, skin removed (we used Granny Smith)
- 2 tablespoons brown sugar
- 1 tablespoon sugar
- 1 teaspoon cinnamon
Buttery Scalloped Potatoes

- 2 tbsp all purpose flour
- 1 tsp salt
- 1/4 tsp pepper
- 4 cups potatoes, peeled and thinly sliced
- 2/3 cup sweet onion, thinly sliced
- 2 tbsp butter, sliced
- 1 1/2 cups milk
- Garnish: paprika
Hot Chocolate French Toast

To make the ganache. In a microwave safe bowl add the cream, coconut oil and chocolate
- 1 cup canned coconut milk (may swap 2% or whole milk)
- 2-4 tablespoons of your favorite hot cocoa mix
- 3 large eggs
- 2 tablespoons vanilla extract
- 1/2 teaspoon coconut extract (optional)
- 1/4 teaspoon salt
- 4 tablespoons butter (may swap coconut oil, but I do think butter works just a tad better)
- 8 rather thick slices of challah bread (or whatever your favorite french toast bread is!)
- 3/4 cup canned coconut milk (may sub heavy cream)
- 9 ounces semi-sweet chocolate, chopped
- 1 tablespoon coconut oil (or butter)
- 2 teaspoons instant expresso powder
- coconut whipped cream (or regular whipped cream)
- marshmallows (homemade are best!)
- toasted coconut
Crisp Almond Cookies

1.Cream together butter and sugars, until light and fluffy, about 5 minutes
- 1 1/2 cups butter, softened
- 1 cup brown sugar
- 1 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all purpose flour
- 1 teaspoon baking power
- 1/8 teaspoon salt
- 1 cup finely chopped almonds
Sweet Potato Casserole

- 3 cups mashed sweet potatoes (2 40 oz cans)
- 1/2 cup sugar
- 1 1/2 sticks plus 1 tbsp butter melted and cooled
- 2 large eggs

- 1/3 cup evaporated milk (small can)
- Pinch nutmeg
- 1 cup firmly packed light brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
Broiled Tomato Slices

- 2 whole cucumbers (make sure to use cucumbers with no waxy texture on the peel)

- 2 1/2 lb beef brisket
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 16 oz can cranberry sauce
- 1 8 oz can tomato sauce
- 1 med onion chopped
- 1 tbsp mustard

- 3 pounds chicken wings, or a mixture of wings and thighs
- 2 quarts water (or to cover the chicken and vegetables)
