Vividly Vegan Carrot Cake

Made with agave nectar, this eggless cake is lower in fat and calories
- Cake:
- 2 1/2 cups all-purpose flour, plus 1/4 cup
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon fresh ground nutmeg
- 1/2 teaspoon ginger
- 1/2 teaspoon ground allspice
- 1/2 cup safflower or canola oil
- 1/2 cup dark agave syrup
- 1 cup unsweetened applesauce
- 1/2 cup almond milk (or soy milk)
- 1 teaspoon vanilla
- 1 14-ounce can crushed pineapple in 100% pineapple juice
- 2 cups finely grated fresh carrot
- 1 cup chopped walnuts
- 1/2 cup golden raisins
- 1/2 cup flaked coconut
- Frosting:
- 8 ounces soy cream cheese, room temperature (Tofutti)
- 1/3 cup vegan margarine, room temperature (Earth Balance)
- 1 teaspoon vanilla
- scant 1/8 teaspoon almond extract
- pinch of salt
- 3 cups sifted powdered sugar
Pico de Gallo Salsa

Place all of the ingredients in a bowl, toss well and serve
- 1 pound ripe tomatoes, about 3 cups, halved, cored, seeded (optional) and chopped
- 1/2 cup white onion, finely chopped
- 1 jalapeño or serrano chile, finely chopped, or more to taste (seeding is optional)
- 1/2 cup cilantro, rinsed, drained, lower part of the stems removed, roughly chopped
- 2 to 3 tbsp fresh lime juice, more or less to taste
- 2 tbsps olive oil, optional
- 1 tsp kosher or sea salt, or more to taste
Chewy Brownies

For the chewiest texture, it is important to let the brownies cool thoroughly before cutting
- 1/3 cup Dutch-processed cocoa
- 1 1/2 teaspoons instant espresso (optional)
- 1/2 cup plus 2 tablespoons boiling water
- 2 ounces unsweetened chocolate , finely chopped (see note and related illustration)
- 4 tablespoons (1/2 stick) unsalted butter , melted
- 1/2 cup plus 2 tablespoons vegetable oil
- 2 large eggs
- 2 large egg yolks
- 2 teaspoons vanilla extract
- 2 1/2 cups (17 1/2 ounces) sugar
- 1 3/4 cups (8 3/4 ounces) unbleached all-purpose flour
- 3/4 teaspoon table salt
- 6 ounces bittersweet chocolate , cut into 1/2-inch pieces (see note)
Farro Potato Bread

Farro adds the most wonderful chewy texture to breads
- 1/2 cup instant potatoes
- 1/2 cube butter (maybe we should put the cup version, since not many people are familiar with this)
- 3 1/2 cups hot water
- 1/2 cup sugar
- 1 T. salt
- 1 1/2 cups soaked and steamed farro
- 6-8 cups Natural White or other high gluten flour
- 2 T. Saf or other instant yeast
Emeril's Basic Pizza Dough

Combine yeast, water, and sugar in a large bowl and stir well to combine
- 1 (1/4-ounce) packet active dry yeast
- 1 cup warm water (about 110 degrees)
- Pinch of sugar
- 1 1/2 teaspoons salt
- 1 1/2 tablespoons extra-virgin olive oil, plus more for coating bowl
- 2 1/2 to 3 cups all-purpose flour, plus more if needed
- Cornmeal for dusting, if needed
Marinara Pasta

- 1 tablespoon extra-virgin olive oil
- 5 cloves garlic, minced
- 1 (28-ounce) can plum tomatoes, blended
- 4 fresh basil leaves
- 1/4 cup chopped fresh flat-leaf parsley

- 1/2 teaspoon crushed red pepper flakes, optional
