- 4 butterflied whole trout
- Salt and freshly ground black pepper
- Flour, for dredging
- Olive oil, for sautéing
- 2 tablespoons butter, plus 1 tablespoon
- 2 lemons, supremed and cut into 1/2-inch pieces
- 1 tablespoon capers

- 1/4 cup dry white wine
- 1 teaspoon lemon juice
- 1/4 cup chopped parsley leaves
- 3 tablespoons olive oil
- 4 (1/2-inch thick) slices white bread, crusts removed and cut into 1/4-inch cubes

Portabella Pizza with Cashew Basil Cheese Sauce

Preheat oven by setting the broiler on low
- 8 Portabella mushrooms
- 2 cups pizza sauce
- Vegan Cashew Basil Cheese Sauce (see recipe below)
- 1/3 cup of each: red, green, orange pepper, diced
- 1/3 cup sweet onion, diced
- 2-3 large basil leaves, finely diced
- 1 tsp red pepper flakes
