- 2 pounds ground beef

- 16 ounce can pineapple chunks w/juice
- 2/3 cuo vinegar
- 2 tbsp soy sauce
- 1 onion, chunked

BBQ-Glazed Meatloaf

Transform this dinner classic with a tangy glaze
- 1 onion, roughly chopped
- 2 celery stalks, roughly chopped
- 1 carrot, roughly chopped
- 2 garlic cloves, halved

Vegan Summer Squash Pie

This is a veganized version of a Southern Living recipe from the late 1980’s
- 7 small or 3 large pattypan squash, (1/2 pound), sliced 1/4 thick (across, not stem to navel)
- olive oil spray
- 1/2 pound fresh spinach leaves, washed (I used prewashed baby spinach leaves)
- 1 medium size yellow squash, chopped
- 1 small or 1/2 large vidallia onion, chopped
- 1 small or 1/2 large red bell pepper, seeded and chopped
- 1 12 ounce pkg lite firm silken tofu, drained
- 1/4 cup soymilk (I use Edenblend rice soy beverage)
- 2 Tbs nutritional yeast
- 1 Tbs cornstarch
- 1 tsp tahini
- 1/4 teaspoon turmeric
- 3/4 teaspoon salt
- vegan cheese slices (0ptional, I did not use any on the pie pictured)
Quinoa-Flax Seed Pizza Dough

When choosing a pizza dough, it’s often a battle of nutrition versus taste
- 1 1/2 cups all-purpose flour
- 1/2 cup quinoa flour
- 2 tbsp ground flaxseeds
- 1/2 tsp salt
- 1 package instant dry yeast (21⁄4 tsp)
- 1 tsp honey
- 2/3 cup water (heated to 100° to 110° F)
- 1 to 2 tbsp all-purpose flour, for dusting
Dad's Famous Cucumber and Onion Salad

In a mixing bowl, combine all of the ingredients except pepper and parsley
- 2 large cucumber, scored but not peeled, cut into 1/4-inch-thick slices
- 1 medium white onion, cut into 1/4-inch-thick slices, or Julienned #2 cutting cone blade
- 1/2 red onion, cut into 1/4-inch-thick slices, or Julienned #2 cutting cone blade
- 1 tablespoon sugar
- 1/2 cup distilled white vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon chopped fresh parsley
Delicious Hot Chocolate

To make the basic hot chocolate, combine milk with half-and-half in a small saucepan
- 2 cups Milk
- 2 cups Half-and-half
- 1 cup Good Semi Sweet Chocolate Chips
- Splash vanilla extract
- 1 teaspoon Sugar (optional)
- VARIATIONS: Orange Rind, Orange Syrup, Cinnamon Sticks, Raspberry Syrup, Abuelita Chocolate, Mint Extract, Peppermint Patties, Whipped Cream, Chocolate Shavings
Cape Cod Soft Molasses Cookies

These wonderful cookies are soft, moist, chewy
- 3/4 cup (12 tablespoons) butter
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 1 large egg
- 1/3 cup molasses
- 2 1/4 cups King Arthur Unbleached All-Purpose Flour
- 1/3 cup traditional or quick rolled oats
- 1/2 cup crystallized ginger, finely diced
- 1 teaspoon grated fresh ginger, or to taste
- heaping 1/2 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground allspice or ground cloves
- 1/4 teaspoon ground black pepper, optional
- 1 teaspoon espresso powder, optional; for depth of flavor and added color
- 1/3 to 1/2 cup granulated sugar or coarse white sparkling sugar, for coating
Honey Chicken

Marinate the chicken cubes with the Marinade for 5 minutes
- Ingredients:
- 1 lb boneless chicken breast, cut into 1-inch cubes
- Oil, for deep-frying
- 2 teaspoons cornstarch mixed with 4 teaspoons of water, for sauce thickening
- Salt and sugar to taste
- Toasted sesame seeds, to garnish
- Marinade:
- 1/2 teaspoon salt
- 3 dashes ground white pepper
- Frying Batter:
- 1 egg white
- 1/2 cup all-purpose flour, sifted
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/2 cup water, ice cold
- 1 tablespoon peanut oil, or regular cooking oil
- 1/4 teaspoon salt
- Honey Garlic Sauce:
- 2 cloves garlic, sliced or lightly bruised
- 1/3 cup pure honey
- 1 teaspoon salt
- 1 teaspoon Chinese cooking wine, or dry sherry wine
- 1 teaspoon apple cider vinegar
- 1/4-1/2 cup of water
