Shortbread Cookies

Using electric mixer, beat butter until very creamy
- 2 cups softened unsalted butter
- 1 cup fruit or granulated sugar
- 1 tsp vanilla extract
- 1 cup corn starch or rice flour
- 1 tsp salt
- 1 pkg hard candies or chocolate kisses
Blue Cheese Mashed Potatoes

- 2 pounds Yukon golden potatoes, washed and quartered
- Salt
- 4 tablespoons butter
- 3/4 cup heavy cream
- 4 ounces blue cheese, crumbled
- Freshly ground black pepper
Mediterranean Orzo Salad

Bring a large pot of water to boil
- 1 lb orzo or other small pasta
- 1/4 cup olive oil
- 1/3 cup red wine or balsamic vinegar
- 1/4 cup freshly squeezed lemon
- 2 tbsp lemon zest
- 1 cup cucumber, quartered lengthwise and cut into 1/2 inch pieces
- 1 pint grape tomatoes, halved lengthwise
- 1 med red onion, finely chopped
- 1 cup kalamata olives pitted and coarsely chopped
- 1/2 cup drained capers (optional)
- 1/2 cup fresh parsley or spinach leaves
- 1 cup crumbled feta
- freshly ground pepper to taste

Antipasto squares

Preheat oven to 350 and grea 9x13 baking sheet with cooking spray
- Cooking Spray
- 2 (8oz) tubes crescent dough
- 1/2 lb deli ham
- 1/4 lb pepperoni
- 1/2 lb sliced provolone
- 1/4 lb sliced mozzarella
- 1c (16oz) jar sliced pepperoncini
- 2 tbsp extra virgin olive oil
- 1/4 c freshly grated paesan
- 1tsp dried oregano

- 2 3/4 cups low-sodium chicken stock
- 1/4 cup fresh lemon juice
- 1 1/2 cups quinoa
- 1/4 cup extra-virgin olive oil
- 1/4 cup fresh lemon juice
- 3/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh parsley leaves
- 1 tablespoon chopped fresh thyme leaves

Braised Pork with Dates (slow cooker)

In a large bowl place flour, add the roast and coat with flour
- 2 tbs flour
- 1 boneless pork shoulder roast
- 2 tbs butter
- 1 cup chicken broth
- 1/4 cup grainy mustard
- 4 cups fingerling potatoes
- 2 cups peeled shallots
- 8 pitted and diced medjool dates

It's amazing to me that something so simple to put together can taste so delicious
- 1 1/2 lbs chicken breast halves, thin (slice down if thick, I use boneless and skinless)
- 1 (10 1/2 ounce) can cream of chicken soup
- 1/4 cup half-and-half
- 1/4 cup milk
- 8 slices baby swiss cheese (can use more if you like lots of cheese)
- 6 ounces chicken flavor stuffing mix
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon fresh ground black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon dried parsley flakes
- 1/2 teaspoon italian seasoning

- 1 teaspoon garlic puree
- 1 pound ground turkey
- 1 (28 ounce) can tomatoes, diced
- 1 sweet red pepper, diced
- 1 430ml jar salsa (choose your spice)
- 1 540 ml can six bean blend, rinsed and drained
- 1 540 ml can white kedney beans, rinsed and drained
- 1 can corn nibblets, drained or 1 1/2 cups frozen
- 3 tablespoons tomato paste
- 1 1/2 teaspoons chili powder, or to taste
- 1 teaspoon cumin
- 1/2 cup cheddar cheese, shredded
- 1/4 cup sour cream

Bacon Wrapped Chicken with Blue Cheese

- 4 pieces boneless skinless chicken breast
- salt and freshlty ground black pepper
- 1 cup blue cheese crumbles
- Drained Spinach
- 4-8 slices bacon
- 1 tbsp EVOO
- 2 tbsp butter
- 2 tbsp flour
- 1 cup chicken stock
- 1/2 cup half and half cream
- 2 tbsp grainy mustard
