Chocolate Pumpkin Cheesecake

Preheat oven to 350 Cheesecake: In a large bowl using a hand mixer beat cream cheese until smooth
- for the oreo crust:
- For the Cheesecake
- 3 (8oz) blocks cream cheese, softened
- 1 (15-oz) can pumpkin puree
- 4 large eggs
- 3/4 c granulated sugar
- 1/2 c packed brown sugar
- 1/4c sour cream
- 2 tsp pure vanilla extract
- 2 tbsp. all purpose flour
- 1 tsp pumpkin pie spice
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 24 whole oreos
- 6 tbsp melted butter
- for serving
- 1/4 c chocolate chips, melted
- 1/4 c caramel sauce
- whipped topping
Meat Loaf- Paula Deen

- 1 pound ground beef
- 1 1/4 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 egg, lightly beaten
- 8 ounces canned diced tomatoes with juice
- 1/2 cup quick-cooking oats
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon prepared mustard
Warm Couscous Salad

Saute onions and garlic in butter or veg oil until translucent
- 2 cups couscous
- 1 can chickpeas
- 1 cucumber, small dice, seeded
- 2 roma tomatoes, small dice, seeded
- 2 tbsp butter or veg oil
- 3 tbs curry powder
- 1 med wihite onion, small dice
- 1/2 bunch cilantro, chopped
- 3 cloves garlice, minced
- 5 cups veg stock or water
- salt and pepper to taste
Pumpkin Spice Pull-Apart Bread

Preheat oven to 350 and butter a 9x5 inch loaf pan
- 1 c sugar
- 1 1/2 tsp pumpkin pie spice, divided
- 1 (16oz)can refrigerated biscuits, halved lengthwise
- 1 c pumpkin puree
- 1/2 tsp pure vanilla extract
- For Glaze
- 1/4 (8oz) block cream cheese , softened
- 1/2c powdered sugar
- 1/2 tsp pure vanilla extract
- 1/4 tsp pumpkin pie spice
- 1/4c milk
Glazed Lemon Pecan Cookies

Preheat oven to 350°F (180°C)
- 1/2 cup (125 ml) unsalted butter
- 1/2 cup (125 ml) lightly packed brown sugar
- 1 teaspoon (5 ml) grated lemon rind
- 1 egg yolk
- 1/4 teaspoon (1 ml) pure lemon extract
- 1 cup (250 ml) unbleached all-purpose flour
- 1/3 cup (75 ml) finely chopped toasted pecans
- 1/2 cup (125 ml) sifted icing sugar
- 2 to 4 tsp (10 to 20 ml) fresh lemon juice

Heat large non-stick skillet, lightly coated with vegetable oil cooking spray over medium high heat
- 1 lb (500g) boneless beef sirloin grilling steak, cut into strips
- 1 1/4 cups (300ml) Campbell's ready to use 30%less sodium beef broth
- 2 tbsp cornstarch
- 1 tbsp say sauce
- 1 tbsp packed brown sugar
- 1/4 tsp garlic powder
- 3 cups fresh or frozen cut-up vegetables
- 4 cups hot cooked rice

Preheat oven to 350 and grease 9x13 baking sheet with cooking spray
- Cooking spray
- 2 tubes Crescent dough
- 1/2 lb deli ham
- 1/4 lb pepperoni
- 1/2 lb sliced provolone
- 1/4 lb sliced mozzarella
- 1 c (16 oz) jar sliced pepperoncini
- 2 tbsp 2 tbsp extra virgin olive oil
- 1/4 c freshly grated Parmesan
- 1 tsp dried oregano

- 1 lb sea scallops
- 5 tbsp butter
- 4 cups coarsely torn swiss chard leaves (ribs removed)
- 1 cup chopped seeded plum tomatoes
- 1 cup dry white wine
- 1/2 cup sliced fresh basil
- 1/4 cup drained capers
- 2 garlic cloves, minced
