Spicy and Saucy Tofu and Chicken Stir Fry

Marinate tofu in soy sauce
- 4 tsp canola oil
- 4 cloves garlic, minced
- 1 hot red chili pepper, seeded and finely chopped
- 1 lb ground chicken
- 1 can no slat diced tomatoes, drained
- 1 sweet red pepper, thinly sliced
- 1 pkg (454g) medium firm tofu drained, patted dry and cut in 1/2 in cubes
- 2 tbsp soy sauce
- 4 green onions, chopped
- could add mushrooms and medley of frozen corn, carrots and peas
2Step Honey Dijon Chicken

Brown 4 chicken breast halves in oil Add 1 can of soup mixed with water , Dijon and honey
- 4 (1lb) boneless skinless chicken breast halves
- 1 tbsp oil
- 1 can Campbell's Condensed Low Fat Cream of Chicken Soup
- 1/2 cup water
- 3 tbsp Dijon style mustard
- 1 tbsp honey
Cake mix Cheesecake

Preheat oven to 350 Prepare cake mix according to package
- 1 pkg yellow cake mix
- tub ricotta
- 1/4 c sugar
- 3 eggs
- 1 tsp vanilla
Lemon Shrimp Pasta Salad

Cook pasta as directed on package
- 5 cups farfalle pasta cuncooked
- 1 lb fresh asparagus spears, cut into 2 inch lengths
- 3/4 cup Kraft zesty italian dressing
- 1 tsp dried oregano leaves
- 1 tsp grated lemon peel
- 1 lb cooked large shrimp 20 to 25 count
- 1 cup halved or quartered cherry tomatoes
- 1 pkg Kraft double cheddar shredded cheese
Artichoke Pastry Puffs

Preheat oven to 350f. Place frozen shells on rimmed baking sheet
- 2 - 225 - g pkgs frozen mini tart shells
- 8 oz (250g) block regular cream cheese
- 1/3 cup mayonnaise or regular sour cream
- 1/4 cup freshly grated Parmesan or Asiago
- 6 oz (170ml) bottle marinated artichoke hearts, well drained (3 whole)
- 1/2 tsp dried dill weed
- /2 tsp Tobasco
- 2 large whole roasted red peppers
Peanut Butter Cup Cookies (Tarts)

I first saw these at a bake sale and was so impressed
- 36 reese's miniature peanut butter cups, unwrapped
- 1/2 cup peanut butter
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar, firmly packed
- 1 large egg, beaten
- 1/2 teaspoon vanilla
- 1 1/4 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
20 minute Chicken & Rice Dinner

Heat oil in a large non-stick skillet set over medium heat
- 1 tbsp canola oil
- 4 (1lb) boneless skinless chicken breasts, cut into strips
- 1 can Campbell's Condensed Low Fat Cream of Chicken Soup
- 1 1:2 water
- 2 tsp paprika
- 2 cups fresh cut up cooked or frozen vegetables mixture, thawed( eg peas, corn, carrots)
- 1 1/2 cups dry instant rice
Caramelized Honey Dijon Chicken

Directions Heat a skillet on medium high heat and add olive oil
- 2 tablespoons spicy mustard (I used Trader Joe’s Sweet + Hot) salt & pepper
Mozzarella sticks

Add the potatoes to a large pot with enough cold water to cover them
- 2 lbs russet potato, peeled and quartered
- 2 cloves garlic, minced
- 2 tbsp. fresh flat leaf parsley, finely chopped
- 1/2 c grated parmesan cheese, plus more for garnish
- 4 large eggs, beaten, divided
- salt and pepper , to taste
- 12 sticks mozzarella cheese, halved crosswise
- 1 c flour
- 1 c plain breadcrumbs
- oil for frying
- marinara sauce for serving
- fresh parsley, chopped, for garnish
Spinach and Three Cheese Calzone

For Filling: In a saute pan, heat oil over medium heat
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 pound baby spinach, washed and dried
- Salt and pepper
- 15 ounces ricotta
- 1 cup grated Parmesan
- 1/2 cup shredded fontina
- 1 egg
- 1/2 teaspoon red pepper flakes
