My trial original recipe for leg of lamb

  • 2-3 lbs leg of lamb, well trimmed, boned, rolled, tied
  • 2 Tbs Whole-Grain Mustard/Dijon Mustard
  • 1 tsp Garlic, minced
  • 1/2 tsp dried Rosemary
  • 1 tsp Mint, fresh cut
  • 1/2 tsp Black Pepper
  • 1 Tbs EVOO
  • 3 Tbs Butter/Oleo
  • 1 Onion diced
  • 1 cup carrots, cut in large chunks
  • 3 cups potatoes, cut in large chunks
  • 1/2 tsp dried Parsley, Thyme
  • 1 Tbs Paprika
  • 1 pinch Coarse Sea Salt
  • 1 1/2 Cups Lamb/Chicken/Veg Broth
  • 1 Bay Leaf
  • Mint jelly, optional

  • 2 Pounds Confectioner's Sugar, sifted
  • 1/4 Cup Water, cold
  • 1 Tbsp Gelatin, unflavored
  • 1/2 Cup Corn Syrup, white (or Glucose found in cake decorating store)
  • 1 1/2 Tbsp Glycerine (found in cake decorating store)
  • 1 tsp Flavoring (Vanilla will give the fondant an off-white color)
  • Cornstarch
