Zucchini Pizza Casserole

Place zucchini in strainer; sprinkle with salt
- 4 cups shredded unpeeled zucchini
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup grated Parmesan cheese
- 2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
- 1 cup (4 ounces) shredded cheddar cheese, divided

Sausage, Peppers and Onions

In a large saute pan, heat 2 tablespoons of the olive oil over medium-high heat
- 3 tablespoons olive oil
- 1 1/2 pounds mild or hot sausages links
- 5 medium red bell peppers, cut into thin strips
- 2 large red onions, thinly sliced into rings
- 1 tablespoon tomato paste
- 3 cloves garlic, minced
- 1/2 cup chicken stock
- Kosher salt and freshly ground black pepper
- 6 hoagie rolls, split lengthwise three-quarters of the way through and toasted
Mustard-Crusted Salmon
