Preheat oven to 450°F with rack in middle
- 1 pound mushrooms such as cremini or white, halved lengthwise if large
- 2 tablespoons capers, rinsed and chopped
- 3 large garlic cloves, minced
- 2 tablespoons vegetable oil
- 3 tablespoons unsalted butter, cut into pieces
- 2 teaspoons fresh lemon juice
- 1/4 cup chopped flat-leaf parsley

- 2/3 cup tomato purée
- 1/4 cup orange juice
- 2 tablespoons Worcestershire sauce

- 1 1/2 cups white vinegar

- 1 1/4 cups dried lima beans or navy beans, rinsed and drained
- 2 1/2 cups water
- 4 ounces salt pork or fully cooked ham, chopped
- 1/4 cup chopped onion (about 1/4 large)
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon ground ginger
- 1/4 teaspoon dried sage
- 1/4 teaspoon black pepper
- 2 cups milk
- 2 tablespoons butter
