Cheese-Stuffed Mushrooms Recipe

Directions Remove stems from mushrooms and finely chop
- 24 medium fresh mushrooms
- Butter-flavored cooking spray
- 3 tablespoons chopped shallot
- 2 teaspoons olive oil
- 1/2 cup white wine or reduced-sodium chicken broth
- 1/4 cup plus 6 tablespoons shredded reduced-fat Swiss cheese, divided
- 1/4 cup grated Parmesan cheese
- 3 tablespoons dry bread crumbs
- 2 to 3 tablespoons fat-free milk
- 2 tablespoons dried parsley flakes
- 1/2 teaspoon dried tarragon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

- Ingredients:
- 1 tablespoon olive oil
- 8 green onions, chopped
- 1 red pepper, chopped
- 2 cloves garlic, minced
- 1/2 cup dry yellow grits
- 1 1/2 cups chicken stock
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/2 teaspoon salt
- 1 cup cooked shrimp, chopped
- 8 spring roll wrappers, thawed
- 2 ounces goat cheese
- Juice of one lime
- Directions:
- Preheat oven to 350˚F. Heat olive oil over medium heat in a medium pan and sauté green onions and red peppers for 5 to 7 minutes or until soft. Add garlic and sauté 1 additional minute. Remove from heat.
- Combine grits and chicken stock in a small pot and bring mixture to a boil. Simmer for 5-10 minutes or until grits are tender. Stir in paprika, cayenne pepper, oregano, thyme, and salt. Mix in vegetable mixture and shrimp

- Penzey's Pork Chop Seasoning for seasoning pork chops (optional, but good. If you don't want to buy this, season the pork chops with a tiny bit of garlic powder.)
- 1/4 cup almond meal
- 1-2 T olive oil (will depend on your pan)
- 1/2 cup chicken stock
- 3 T half and half or milk
- 1 T Dijon mustard (or less, can also use milder flavored mustard if desired)

- 1/2 cup frozen spinach, excess moisture removed and chopped (mine was pretty finely chopped)
