Mexican Egg Rolls

Begin by adding three tablespoon of oil to a large skillet
- 4 boneless, skinless chicken thighs
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 3 tbsp canola oil
- 1 cup of frozen corn
- 1 cup canned black beans, rinsed and drained
- 4 1/2 oz of canned green chilis
- 2 serrano chili peppers, stemmed and seeded, finely diced
- 1/2 cup of cilantro, finely chopped
- 1/2 tsp cumin
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup of shredded colby jack cheese
- Spring roll wrappers, (my favorite)
- 1 large egg, beaten
- 4 cups of canola oil
- Fresh Guacamole
- Fresh Salsa
Chicken Marsala II

Directions Melt 1 tablespoon butter in a medium skillet
- 1/4 cup butter, divided
- 2 cups sliced fresh mushrooms
- 1/4 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1 1/2 pounds skinless, boneless chicken meat - cut into 12 pieces
- 2 slices bacon, diced
- 1/4 cup cold water
- 1 teaspoon cornstarch
- 1/2 cup dry Marsala wine
Chicken Tortellini Soup

1. Melt butter in large saucepan over medium high heat
- 3 tablespoons butter
- 1 cup chopped celery
- 1 cup sliced carrots
- 1/2 cup chopped onion
- 10 cups chicken broth (Imagine or Pacific brand)
- 2 cups water
- 2 9-ounce packages tortellini
- 1/4 cup chopped parsley, plus extra for garnish
- Salt and pepper to taste
- 1/2 teaspoon nutmeg
- Freshly grated parmesan cheese

Preheat oven to 350ºF
- 3 cups flour
- 1 tbsp baking powder
- 1 tbsp baking soda
- 1 tbsp cinnamon
- 1 tsp salt

Roasted Sausages and Grapes
