Baked Mexican Cheese Sticks

- 6 chicken thighs, boneless, skinless, (about 1½ lbs)

- 1 tablespoon garlic, minced
- 8-10 ounce package mushrooms, sliced
- 1 large onion. chopped, about 2 cups
- 1 large red bell pepper, sliced thin
- 1 yellow bell pepper, sliced thin
- ½ cup white wine
- 1 (24 oz) jar Classico Tomato and Basil Tomato Sauce or your favorite
- ½ teaspoon Italian seasonings
- Fresh ground pepper to taste

- 1 (3-oz.) package Oriental-flavored ramen noodle soup mix
- 2 cups water
- 1 chopped green onion
- 2 tablespoons chopped fresh cilantro
- 1/2 cup fresh snow peas, trimmed
- 6 peeled and deveined medium-size raw shrimp (26/30 count)

Edamame Hummus

Preheat your oven to 400 F
- 1 head Garlic
- 1 Tablespoon Olive Oil
- 12 ounces, weight Frozen Edamame (shelled)
- 1 whole Lemon, Juiced (1 Lemon Should Yield 3-4 Tablespoons)
- 1/2 teaspoons Salt
- 1 Tablespoon Tahini (stirred Well)
- 1 dash Cayenne Pepper
- Salt And Pepper, to taste
EGGPLANT SOUFFLE

In a sauce pan, add 1 c water to eggplant and bring to a boil
- 1 eggplant (a decent size), peeled, cut into cubes
- 1 stick butter
- 4 eggs
- 1 1/2 c milk
- 1 1/2 c SHARP cheddar cheese, grated...has to be sharp
- 1/2 t salt and pepper
- 1 sleeve saltine crackers, crushed
- Parmesan cheese (the powdery kind in the canister)
Tortellini and Sausage Soup

In a Dutch oven, crumble and brown sausage
- 3 Italian sausages, casings removed
- 1 medium onion, chopped
- 1 clove garlic, minced
- chicken stock- 6 cups (homemade tastes best)
- 2 fresh tomatoes -diced or one can of tomatoes
- 2 carrots- diced
- 1 green bell pepper, chopped
- chopped fresh basil (about 4-5 leaves) or 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- black pepper to taste
- 1 can of beans like navy, chickpea, great Northern or your choice- drained
- 1 (8 oz.) can tomato sauce
- 16 ounces frozen cheese tortellini
- fresh spinach- about 3 good handfuls
- freshly grated Parmesan cheese for topping
