Excellent. Can also be used as an appetizer in scallop shells, or served in mini tarts as a warm hors d'oeuvre
- 1/3 cup uncooked rice
- 1/2 lb bay scallops (small)
- 1 can mushrooms or equivalent fresh mushrooms (sliced)
- 2 Tbsp. margarine/butter
- 1 small onion - grated
- 3 Tbsp. flour
- 1 cup white wine
- 1 can cream of mushroom soup
- 1/4 tsp. thyme
- 1/4 tsp. basil
- Salt and pepper to taste
- 1/2 cup of half and half cream
- 1 can tuna or salmon (drained)
- 1 can real crab meat (drained)
- 1/2 lb. small cooked, peeled shrimp
- 1 1/2 cups of diced celery/sweet peppers
- 1/4 cup breadcrumbs
- 1/2 cup grated cheddar cheese
- 2 Tbsp. melted margarine

Glazed Meatloaf Recipe

- Meatloaf:
- 1 Tbsp. olive oil
- 1 1/2 cups onion, chopped
- 3 garlic cloves, minced
- 2 large eggs
- 1/2 cup milk, plus milk to soak breadcrumbs
- 3 tsp. Dijon mustard
- 1 1/2 tsp. hot sauce
- 1/2 teaspoon dried marjoram
- 1 tsp. Worcestershire sauce
- fresh ground pepper
- 1 1/2 lb. extra lean hamburger
- 1/2 lb. lean ground pork
- 1 1/2 cups fresh bread crumbs, soaked in milk to cover and wrung out
- 1/4 cup fresh parsley, minced
- Glaze:
- 1/2 cup ketchup
- 1/4 cup light brown sugar
- 1 1/2 Tbsp. cider vinegar
Potatoes Dauphinoise

Thinly sliced potatoes with a creamy, Gruyere cheese sauce
- 1 clove garlic, cut in half for rubbing dish
- 2 Tbsp. butter
- 1 1/2 cups whole milk, more or less
- 2 lbs potatoes, peeled and very thinly sliced
- S&P, freshly ground
- Pinch freshly grated nutmeg
- 1/2 cup whipping cream
- 1/4 cup grated Gruyere cheese
Venison Chili

In a large Dutch oven, sauté venison until just cooked
- 2 lbs. ground venison
- 1/4 lb. thick-cut bacon, diced
- 2 medium yellow onions, diced
- 1 medium red onion, diced
- 2 jalapeno peppers, seeded and diced
- 1 yellow pepper, seeded and diced
- 1 red pepper, seeded and diced
- 1 green pepper, seeded and diced
- 1 can chipotle peppers, finely chopped
- 3 cloves garlic, minced
- 1/4 cup Balsamic vinegar
- 4 Tbsp. chili powder
- 1 Tbsp. paprika
- 1 Tbsp. cumin
- 1 Tbsp. salt
- 1 Tbsp. pepper
- 1 Tbsp. cinnamon
- 1/4 cup honey
- 1 Tbsp. molasses
- 1 bottle Guinness or other stout beer
- 1/2 cup good red wine
- 1 can whole plum tomatoes
- 1 can crushed tomatoes
- 2 cans black beans, rinsed
- Chopped cilantro
Crock Pot Mexican Tortilla Lasagna

1. Heat 1 tbsp of olive oil in a large sauté pan and cook the onions for 3 minutes
- 1 Tbsp Olive Oil
- 1 Large Onion, diced
- 1 Garlic Clove, minced
- 1 lb Lean Ground Turkey
- 1 Tsp Ground Cumin
- 1 Tsp Kosher Salt
- 1/2 Tsp Chili Powder
- 1 Large Egg, whisked
- 1/2 Cup Sour Cream
- 1 Cup Carrots, peeled and grated (about 2 carrots)
- 1 Cup Frozen Corn Kernels, defrosted
- 1/4 Cup Cilantro, chopped
- 1 12 oz Pkg. Corn Tortillas (12 Tortillas)
- 2 Cups Mexican Cheese Blend
- 2 16 oz Jar Mild Chunky Salsa

- 1/2 cup tequila
- 1 Tbsp. lime juice
- 1 cup orange juice
- 3 Tbsp. brown sugar, divided

- 1/2 lb. assorted mushrooms, quartered

- 1 (14.5-oz.) can diced tomatoes
- 1 (10-oz.) package frozen spinach, thawed and drained of excess liquid
- 2 tsp. red pepper flakes
- 1/2 cups bread crumbs
- 1/4 + 1/3 cup grated Parmesan
- 1/4 +1/3 cup Romano
- 1/2 cup ricotta
- 4 tablespoons butter, softened
