Mexican Salsa

In the summertime, I love to make this zippy salsa with fresh tomatoes and peppers from my garden
- 3 jalapeno peppers
- 1 medium onion, quartered
- 1 garlic clove, halved
- 2 cans (one 28 ounces, one 14-1/2 ounces) whole tomatoes, drained
- 4 fresh cilantro sprigs
- 1/2 teaspoon salt
- Tortilla chips
Pumpkin Gooey Butter Cake

In a large bowl, beat the cake mix, egg and butter on low speed until combined
- FILLING:
- 1 package (18-1/4 ounces) yellow cake mix
- 1 egg
- 1/2 cup reduced-fat butter, melted
- 1 package (8 ounces) reduced-fat cream cheese
- 1 cup canned pumpkin
- 1/2 cup reduced-fat butter, melted
- 2 eggs, lightly beaten
- 2 egg whites
- 1 teaspoon Spice Islands® pure vanilla extract
- 2-3/4 cups confectioners' sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- Additional confectioners' sugar, optional

- Ingredients (Syrup):-
- 1000 g / 2.2lb of sugar
- 100 g / 3.5oz of light corn syrup or maltose
- 1 tsp of white vinegar (careful here, too much or too little might mess up the final product)
- 500 ml or 2 cups of water
- Ingredients (Dusting):-
- 3 to 4 cups of corn starch or rice flour
- Ingredients (Filling):-
- 2 to 3 cups of peanuts
- Tools:-
- a saucepan that will comfortably fit the ingredients
- a candy thermometer
- a pastry brush
- round disposable plastic containers or preferably silicone doughnut baking molds
- your hands
- Note: We highly HIGHLY recommend you use silicone doughnut baking molds or just silicone baking molds in general. We will cover why a steps down.
Mexican Crunchwrap Supreme (Taco Bell Inspired)

Warm up your refried beans (and taco meat, if you’re using it)
- Large, burrito-sized tortillas or “wraps” (I used some uber-healthy whole wheat, high-fiber ones.)
- Refried beans
- Taco meat (optional … I included it on one, but not on the other, and I really couldn’t much tell the difference)
- Chopped onion, green onion, bell pepper, jalapeno, tomato or other favorite “taco-style” vegies (maybe some corn?)
- Tostado or taco shells or crushed tortilla chips (I found a whole grain taco shell I really like that I used here …)
- Shredded sharp cheddar or mexican blend of cheeses
- Condiments: salsa, lettuce, and greek yogurt
Peanut Butter & Chocolate Shortbread Bars

Upgrade the classic bar cookie with the buttery tenderness of a shortbread crust
- For the crust:
- 7 oz. (14 Tbs.) unsalted butter, melted and cooled to just warm
- 1/2 cup granulated sugar
- 1/2 tsp. table salt
- 9-1/2 oz. (2 cups plus 2 Tbs.) unbleached all-purpose flour
- 1/2 cup unsalted peanuts, finely chopped
- Tip: For the best results, measure your flour by weight instead of volume. (1 cup of all-purpose flour equals 4-1/2 oz.) If you don’t have a scale, be sure to use the proper technique when filling your measuring cups.For the peanut butter filling:
- 1 cup creamy peanut butter (not natural but an emulsified variety such as Jif)
- 3 oz. (6 Tbs.) unsalted butter, at room temperature
- 6 oz. (1-1/2 cups) confectioners’ sugar
- 1 tsp. pure vanilla extract
- For the ganache:
- 5 oz. good-quality bittersweet chocolate, such as Lindt Excellence, chopped (about 1 heaping cup)
- 1/2 cup plus 2 Tbs. heavy cream

- 3/4 teaspoon salt
- 3 pounds peeled baking potatoes, cut into 1/4-inch-thick strips
