Crunchy, Juicy, Spicy Ritz Chicken

Directions Process Ritz crackers in food processor until you have fine crumbs
- 4 lg. boneless, skinless chicken breasts, cut in thirds
- 1 1/2 bags of reduced-fat Ritz crackers
- 2 tsp. garlic powder
- 1 tsp. cayenne pepper
- 2 eggs, beaten (or equivalent Egg Beaters)

Perfect Potato Pancakes

1.Chop onions, and saute them in a pan with a little oil until wilted and translucent
- 2 large white onions
- Light vegetable oil
- 2 pounds potatoes, with skins still on
- Salt and black pepper, to taste
- 1 pinch nutmeg
- 2 eggs, beaten (or equivalent egg substitute)
- 2 tablespoons whole wheat flour
