Buttermilk Fried Chicken

Wash the chicken and dry it with paper towels
- 2 cups buttermilk
- 2 eggs
- 1 tsp paprika
- 1 tsp hot sauce (I used some Louisiana Hot Sauce)
- salt and pepper to taste
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- flour
- 1 lb of chicken wings, or chicken breast (or even legs)
- vegetable or canola oil for frying (I use LouAna canola oil)
Pork Chops with Cabbage Apple and Fennel and Mashed Potatoes with Cheddar Bacon and Chives

- 2 tablespoons olive oil, divided
- 1 bulb fennel, trimmed, quartered, cored and very thinly sliced
- 3 crisp apples, peeled, quartered, cored and very thinly sliced
- 2 small onions, quartered, peeled and very thinly sliced
- 1 small or 1/2 large white or Savoy cabbage (3/4 to 1 pound) , quartered, cored and sliced 3/4-
- to 1-inch thick
- Salt and pepper
- 2 tablespoons fresh thyme
- 1 tablespoon Acacia honey
- 1 lemon, divided
- 4 bone-in pork loin chops, about 1 1/4 inches thick
- 1/2 cup chicken stock
- For the mashed potatoes
- 8 slices meaty bacon
- 4 large Russet potatoes, peeled and cut into 6 chunks per potato
- 4 cloves garlic, crushed
- 1/2-3/4 cup whole milk
- 2 tablespoons butter
- 4 ounches grated sharp white cheddar cheese
- Salt and white pepper, to taste
- About 1/8 teaspoon freshly grated nutmeg, to taste
- 1/4 cup minced chives
- For the gravy
- 3 tablespoons butter
- 1 teaspoon coarse black pepper
- 1 teaspoon white pepper
- 3 tablespoons flour
- 1 1/2 cups chicken stock
- 1 1/2 cups beef stock
- 1 tablespoon Worcestershire sauce
- Salt, to taste
Waffles - Bisquick

1. Heat waffle iron; grease with vegetable oil or shortening
- 2 cups Original Bisquick® mix
- 1 1/3 cups milk
- 1 egg
- 2 tablespoons vegetable oil
Chicken and Rice (Spanish )

Preheat oven to 350 degrees F
- 1 tablespoon olive oil
- 8 bone-in chicken thighs, skin removed
- 1/2 teaspoon salt
- 1/4 teaspoon coarsely ground black pepper
- 2 medium green peppers, cut into 1/2-inch pieces
- 2 cloves garlic, crushed with press
- 1 large onion, chopped
- 1 tablespoon paprika
- 2 cans (14 1/2-ounce) diced tomatoes
- 1 can (14- to 14 1/2-ounce) chicken broth
- 3 cups water
- 2 1/2 cups long-grain white rice
- 1 package (10-ounce) frozen peas
- 1 cup salad olives or coarsely chopped pimiento-stuffedolives
Cucumber Salad

This is a great yummy summer salad and can stay in your fridge up to 2 months
- 4 thinly sliced cucumbers
- 1-large sliced red onions
- 1-large sliced green bell peppers
- 1-tbsp salt
- 2-cup white vinegar
- 1 1/2-cups sugar
- 1-tsp celery flakes
- 1-tsp red pepper flakes
Tomato Basil Tortellini Soup Creamy,(Crockpot)

One of my favorite things to make is a good slow cooker soup recipe
- 1 3/4 cup diced carrots (3 medium)
- 1 3/4 cup diced yellow onion (1 large)
- 2 Tbsp olive oil
- 5 cloves garlic, minced
- 3 (28 oz) cans whole Roma tomatoes
- 1 (32 oz) carton vegetable broth
- 1/3 cup chopped fresh basil, plus more for garnish
- 2 bay leaves
- 1 Tbsp granulated sugar
- Salt and freshly ground black pepper, to taste
- 16 oz refrigerated three cheese tortellini
- 3/4 cup heavy cream
- Parmesan, shredded, for serving

- 2 potatoes, peeled, chopped into 1 inch cubes
- 1 cup heavy cream
- 1 tbsp flour
- 1 garlic clove, grated
- 1/2 to 1 teaspoon kosher salt
- 1/4 to 1/2 tsp fresh cracked pepper
- 1/2 cup sharp cheddar cheese, grated
- 1/2 Gruyere cheese, freshly grated
- 1 about 1 tbsp butter, for greasing the pan
Vodka Rigatoni, Spicy Italian

Rigatoni is the perfect type of pasta for holding the rich, spicy flavors of this recipe
- 2 tablespoons extra virgin olive oil
- 4 garlic cloves, minced
- 2 pounds hot ground sausage, or a mix of 1 pound hot and 1 pound mild Italian sausage
- 1 large onion, chopped
- 2 (28 ounce) cans Redpack® Crushed Tomatoes in Puree
- 1/4 cup chopped fresh basil
- Salt and black pepper to taste
- 1 cup red wine
- 1 (8 ounce) package shredded Parmesan cheese, or shredded Romano cheese
- 2 cups half & half
- 3 tablespoons vodka
- 1 (16 ounce) package rigatoni pasta, cooked and drained

- 4 boneless pork loin chops, about 3/4 inch thick (1-1 1/4 pounds)
- 1/2 teaspoon ground pepper, divided
- 1/8 teaspoon salt
- 2 tablespoons extra-virgin olive oil, divided

- 2 anchovy fillets, minced, or 1 teaspoon anchovy paste
