Preheat the oven to 350 degrees
- 1 lb ground turkey
- 1 lb ground beef
- 2 eggs
- 1/4 cup gluten free breadcrumbs
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1-2 cloves garlic, finely minced
- 1 small onion, grated
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup grated Parmesan cheese
- 1/2 cup marinara pasta sauce (homemade here, minus the meat)
- 1/2 cup shredded Italian cheese blend
- minced parsley for garnish

Marinate The Night Before: Rinse and trim the chicken
- Day 1:
- 2 - 2 1/2 pound chickens, cut into pieces
- 2 teaspoon salt
- 2 teaspoon pepper
- 3/4 cup olive oil
- 3/4 cup balsamic vinegar
- 2 cups yellow onion, chopped
- 3 tablespoon fresh garlic, chopped
- 2 tablespoon fresh rosemary, chopped
- 2 tablespoon fresh sage, chopped
- 3 tablespoon fresh parsley, chopped
- 3 tablespoon fresh basil, chopped
- Day 2:
- 2 pounds red rose potatoes, peeled
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 Tablespoons olive oil
- 2 -14.5 ounce cans chicken stock
- 2 tablespoons cornstarch
- 1/4 cup cold water

Lemon-Blueberry Bread

Preheat over to 350 degrees
- Glaze:
- 1/3 cup melted butter
- 1 cup sugar
- 3 TBS lemon juice
- 2 eggs
- 1 1/2 cup all purpose flour
- 1 tsp baking powder
- 1 tsp salt
- `/2 cup milk
- 2 TBS grated lemon zest
- 1 @ cup chopped walnuts (I add a few more)
- 1 cup fresh or frozen blueberries
- 1 TBS melted butter
- 1 TBS lemon juice
- 1 cup powdered sugar
- Mix all ingredients for glaze together and drizzle on bread as per directions below.
Watermelon and Mozzarella Panzanella with Prosciutto

Preheat oven to 350°F. Tear the baguette into 1-inch chunks
- 1 French baguette
- 6 tbsp olive oil
- 1 pint cherry tomatoes
- 1 cucumber
- ½ small red onion
- 2 cups watermelon chunks
- 3 tbsp sherry vinegar
- 1 (8 oz) container fresh baby mozzarella (ciliegine)
- 1 (4 oz) pkg prosciutto
- ¼ cup fresh basil
Potato Salad

1. Place potatoes in large saucepan and add water to cover by 1 inch
- to 2 a little dry for your liking, add up to 2 tablespoons more mayonnaise.
- Ingredients
- 2 2 to 4 3/4-inch potatoes (3 to 4 medium), peeled and cut into 3/4-inch cubes
- Table salt
- 2 2 2 tablespoons distilled white vinegar
- 1 1 1/2 medium rib celery, chopped fine (about 1/2 cup)
- 2 2 2 tablespoons minced red onion
- 3 3 3 tablespoons sweet pickle relish
- 1/2 1/2 1/2 cup mayonnaise (see note)
- 3/4 3/4 3/4 teaspoon powdered mustard
- 3/4 3/4 3/4 teaspoon celery seed
- 2 2 2 tablespoons minced fresh parsley leaves
- 1/4 1/4 1/4 teaspoon ground black pepper
- 2 2 1/4-inch large hard-cooked eggs, peeled and cut into 1/4-inch cubes (optional)
Beef: Pot Roast

Season the roast on all sides with salt and pepper toss it in flour
- 1 (3 to 4-pound) boneless bottom round roast
- Kosher salt and freshly ground black pepper
- 1/4 cup vegetable oil
- 1 yellow onions, peeled and quartered
- 1 bag pearl onions
- 2 cups sliced mushrooms
- 3 cloves garlic, smashed
- 1 tablespoon tomato paste
- 1/2 cup red wine
- beef stock to cover
- I also add 1 boullion cube and 1/2 cup hot water
- 3 carrots, peeled and sliced into 1/2-inch pieces
- 3 Tbsp flour
- 3 Tbsp. butter
- Freshly chopped parsley leaves, for garnish
